OP - You could do it, but you'd be following roads the whole way. First, you'd be doing a lot of legally-questionable trespassing if you didn't follow roads most of the way. And second, you'd need to stop many many times to purchase water and food along the trip anyhow. Your biggest safety concern would probably be getting hit by a car, and where to spend the nights. Why Colorado Springs? 'Pikes Peak or Bust' was a misnomer by the way, since the gold-mining region people primarily travelled to was further north.
Mid spring or late summer would be your best time to start. Your gear would probably be basic hiking stuff, since there's no way for you to carry enough food or water for the whole trip and you'll buy things along the way. Dunno how much money you'd want, but you could figure it out by trying one day, and then multiplying the cost out.
