Major touristy places to go: The Althing (Parliament), Geysir (Big geyser), Perlan (The Pearl, its a revolving restaurant on top of 5 giant heated water tanks with a man made geyser in the middle of it.), after that you should take a car tour of the western fjords because they are dazzling and the small towns are fun to stop by. My hometown is Flateyri which is in the NW "head" and its pretty much a ghost town, so if you make it up that far you might as well go 30 minutes further to Isafjordur which is the largest town in the area (a couple thousand) and has some livelyhood.
As far as just hiking, off-roading, snowmobiling, horseback riding, and all that other stuff, it changes every year and you can probably research the best, cheapest, easiest solution. But if you were to visit one site I would recommend Vatnajokull the largest glacier in Europe, and go hiking through the ice caves or just ride a snowmobile across it.

BTW, the locals will know you are a tourist if you don't wear all black or monochrome and/or have a colorful windbreaker on the cold days.
