OP: Go from Cairo, to either Jordan or Saudi Arabia, then go to Lebanon. Hang out in the lebanese mountains, especially in the cedar forests, well worth the trip. From there you've got to cross Syria into Turkey, but north-western Syria is stable enough, not psychotic like the country in general.
Then when you enter Turkey you'll be 100% safe. Nothing has happened in Turkey since like the war during the coldwar. Very strong country, so no political instability to worry about. I personally don't feel safe in some countries out there, namely Iraq and Iran. But I'm a christian lebanese, they'd pretty much open-fire after me.
