Before you go, familiarize yourself with the subway system. Its very straightforward compared to other major cities, so it won't be hard to do. Also, get an Octopus card as soon as you can when you arrive. Aside from being used for just about every form of transportation in HK, it can also be used at 7-11s, McDonalds, and a whole bunch of other places for small purchases. It will be your best friend while you're in HK.
The electronics mall in Sham Shui Po is definitely worth a visit. The hallways are quite small, so avoid going during a weekend or during the evening.
If you like seafood and can splurge on a meal, then you must visit Sai Kung. The restaurants along the waterfront have some of the best seafood I have ever had, period.
Don't be afraid to try some of the more sketchy looking restaurants. Some of the best noodles in the world are tucked away in restaurants situated in small alleys in Kowloon.
If you have the time, try to visit Guangzhou or Shenzhen in the PRC. Although there isn't too much to do in either city, the shopping is significantly cheaper in both places, and they are both easy to reach if you can get a Chinese visa before you leave for HK. Not too interested in shopping? Its still worth going for a day or two just to experience the Mainland (make sure to use taxis; Mainland taxi rides are fun as hell if you get a crazy enough driver).
And of course, don't forget to visit Victoria Peak and Victoria Harbor for views of the city.
