i was there this past new year so i'll just give a few of my thoughts:
-if you're looking for an authentic middle-eastern cultural experience, you wont find it in dubai. it feels like disney world on steroids.
-you can only really have fun if you are willing/able to spend a lot of money.
-there's not much to do besides shopping at the mall, ski-dubai, driving around and seeing everything, the beach, or going on a desert safari. if you're not into that, then come back in a few years when dubai is more developed.
- if you have the money to stay at the madinat jumeirah or the jumeirah beach hotel, you'll love yourself for life.
-40% of the people you see will be western expats/tourists, the other 50% will be indians/phillipinos doing all the labor, and you may spot an emirati if you're lucky.
overall: dubai is really cool, but it's still just brand new (believe it or not). just be careful about arab culture and not getting b& for drugs
