No, Middle America is the proper term for the region, which includes the Caribbean, Mexico, and northern South America. Central America only includes land south of Mexico.

Something to do with their food and food anthropology in the different climates, topologies, were there trade routes were.. and how did that influence their diets.., pre-colombian, post-colombian. Foods besides fish, fowl and mammals would be corn, potatoes, beans, quinoa, amaranth, wild rice, sweet potatos, avocados, vanilla, chocolate, wild nuts and fruits.

Please be more specific. Physical Geography? Human Geography? Most of central America has the same Physical geography since there isn't a lot of land there...

Mexico on the other hand has almost everything, deserts, mountains, tropical forests, volcanoes, tacos, cheap labour, etc.

Well, the north of mexico is very arid(deserts), has a lot of exporting industries and his culture is kind of influenced by the US, it`s the richest part of the country. The middle has an stable temperature(forest), most of the population is there, it`s the administrative center and it´s not so poor. South is full of jungles, there are a lot of indigenous people same goes for most of central america, basic activities tourism, the exploiting of natural resources, guerillas, the poorest part of the country etc.. The country has 2 mayor mountain ranges, in the last 15 years the culture has changed a lot due to globalization, lots of migration etc... meh im lazy.

Actually the whole using "America" to referr to the US is erred and shows ignorance.

America is the whole continent from Alaska to the Patagonia and is in no way just the one country between Canada and Mexico.

It's not the fault of proper Geography nomenclature that you guys lacked imagination when you named your country back in the 1700's.
