Hey OP, I'm a lot like you, only quasi-government job has had me around the world and with enough cash to do a bit of traveling myself. I always shy away from the tourist traps and seek out the lesser touristed areas.
Everyone always says Amsterdam for some reason, and I can see one, the weed of course. However awesome the weed may be, the place was a drag. I suppose it could have been the nature of me getting blasted stoned and watching snooker all day, but when I was out and about, I just wasn't liking it. The people in the coffeeshops are quite chill, but the folk in restaurants and whatnot have a disdain for english-speaking tourists thats palpable. Whats more, when my brother and I went to Vondelpark, the supposed liberal mecca of the 60s-80s, all of the flowerbeds were fenced in for the stupid tourist stoners who'd smash them up. Things like this were rampant, and I cant blame them.
That said We had driven from paris to the dam, so on the way back we made a nice stop in Brussels. Same relaxed attitude, you can get by in French, English, Dutch, and often German, 200% less typical tourist assholes. It's a city full of young educated youth and international businesspeople with outstandingly nice parks, where youre free to have a beer or a splif if you're low-key. Stay at Sofitel Brussels-Europe, which is another awesome Sofitel thats minutes from the most beautiful, and epic/massive structure you'll randomly walk upon whilst stoned, the art history museum.
