I've lived there most of my 20-odd years. It's alright.
For a European, the food is not especially novel. Public food standards are pretty good, little chance of gastric upsets (unlike the rest of southeast Asia). Prices will be no shock to you.
Go see Sydney, Melbourne, maybe Adelaide. Avoid Western Australia, it's big, dry, and boring.

Defiantly don't go between November to February, you will die from the heat (guessing you want to see airs rock in NT).
March time is usually good, just starting to cool down but still warm.
if you are going to do a round trip, maybe arrive in Sydney, go south (Melbourne), then west to Perth, travel inland to NT, finish off in Gold Coast and Brisbane.
