curling is pretty exciting if:

a) your national team is good
b) you're whipping other national teams
c) you're watching the last few rounds (or whatever they're called)

Then again, the above applies to many sports.

But heck, i'm not a yank and I still find baseball a fun sport to watch.

NASCAR is not a sport, so that shouldn't be mentioned.

Poker is also not a sport (though it's hella fun to watch)

Baseball is boring under the following conditions:

1. The umps aren't making the players move the game along (like taking a minute between pitches when Selig has tried to get them to only have 15-20 seconds between pitches)

2. Your hometown/favorite team sucks

3. You're watching two teams about whom you don't give half a shit

4. You're watching by yourself, or you're watching in a crowd of people who, for the most part, don't care about baseball

I'm a huge fan of baseball, but sometimes it's just bullshit to watch. I'm into it mainly for the stats and the uneding drama that follows the Red Sox.

Golf on TV is OK, but that's because you get to skip past all the boring in-between stuff and switch from golfer to golfer to golfer as they all make their shots.

Golf in person is a day-long, multi-acre snooze fest.

Baseball is really fun to watch in person, and I enjoyed the world series (although my dad's family is form Detroit so I had somebody to root for).
A lot of the other stuff mentioned can be fairly entertaining under certain cirumstances. I really liked watching curling during the winter olympics, the strategy and precision were cool, plus its pretty relaxing (I guess this could mean boring to some people). I also really like watching poker and I can get into golf sometimes because of the tension while putting.
I do tend to find soccer boring, just because it's 90 minutes of interesting things *almost* happening, with maybe five minutes of that actually having something exciting going on.
Hockey is kind of the same way for me, although there's usually a lot more action around the nets.

Baseball is not boring, but it requires you to know what is actually going on. If you've played the game at all, you are much more apt to enjoy watching it.

Personally, I can't stand Soccer. I just don't like watching a game where you can have the game end in a 0-0 tie.
