I was the same way. I decided to start with the Sonic papercraft that's in another thread right now, and is also on http://www.plus4chan.org/papercraft/papercraft.php I did a black and white version on draft quality with regular printer paper. Then I did one with cardstock in color after figuring out how the first one went together.
The sonic papercraft is probably the most difficult one I'd reccomend to a beginner. It was made relatively well, and it says the difficulty level on the pages. I think it was 4 stars out of 5.
If you don't want to be quite that ambitious, I've heard someone say that the lucky cats on the cannon website are good for a beginning papercraft that looks nice, and their lucky dragon seems to be a nice one to build as well.
