If you're feeling lazy, go buy 'The Joy of Origami' by Margaret Van Sicklen' (I got my copy from Borders for sixteen dollars) and give that as a gift.
If you're feeling slightly less lazy, make a boquet (I spell that right?) of inflatable tulips or lotus blossoms for your mother. Each design can be learned in a couple tries (although the lotus flowers are /really/ small if you start with an eight and a half inch square).
The butterfly in the book is also pretty easy, too.
Haven't tried anything else in the book, so can't help you there.
