"Zipper" tabs like you call it are very useful for aligning the parts (there's only one way the parts can "hook" together, but also if there's no fold lines: the fold lines just run from one cornerpoint of a tab to the cornerpoint of the opposit tabs. If the tabs were all on one side, you would need markers on the opposite side to know where the fold lines would run; it's a lot of work to add those, and not many paper modellers do a lot of extra work like that.
