I wanna make some papercraft of the flash game I'm working on (I'll be selling copies of the game at a con soon); so I'm wondering if you guys can pull up some papercraft of a similiar style to the pic?

I mostly just want some help figuring out how I'll do the big guys torso/waist.

What do you mean? Just make sure the shape of the bottom of the torso matches the shape of the top of the waist?
Maybe Wind Waker Link from Chokipeta is kinda similar, with a curved look and all. And it was to be simple enough as a gift too.

Yeah that's basically the core of papercraft; how to make the shapes and how to attach them to eachother... ;)
And it's not like there's one solution that you can just follow and get great results every time. You really need to just try it out so you'll develop a feeling for the way paper can bend and curve, how to make certain 3D shapes with 2D templates and what's the best way to attach them.
Most people that make papercrafts here use Pepakura Designer, you'd need a 3D model for that. You can also do it by hand, with trial and error (shape a piece of paper, mark off where and how you need to cut it).

You can study stuff from other designers, but most of it is quite complex and not really suited for a fun gift at a convention I think; that should be small and easy to make.

It can be frustrating, and feel like you're wasting time, reinventing the wheel, but it's worth finding the best solution.

Is the middle strip long enough to go around the top and bottom (testbuild it)?
Maybe you could add glueing flaps all around instead of just 4 places, but that's your own choice: just four flaps is less work of course/with flaps all around you won't have to worry about the tops not fitting perfectly (the glue will MAKE it fit)

Wouldn't that modification mean the top edge won't wrap all the way around the circle?

I think you could do it: 1) "realistic", meaning not like a real person of course, but as close as you can it to your drawings.
2) as easy as you can get, like a hako, not exactly like your drawings, but you still recognize it as the character.

I think you're doing something in between right now; you'r trying to keep the right proportions and everything, but with very simple shapes (understandably, since you're inexperienced). And simple shapes is great, but I think it would be better if you let go of the proportions too, and make it more "chibi". Because if you're limping on two thoughts, you might get the right proportions, but because the shapes aren't really close to the "real" ones, it will probably look very strange.
Of course as always: if you're having fun trying stuff out, don't stop. And if you like the result, then stick with it. ;)
