Is a tutorial about making a menger sponge (the upper left cube in the OP pic).If you understand the concept, you will know how to make the other one as well.

There is another way to build them, with sonobe modules.

The site is in german, so I'll give a short explanation:
To interlock the flaps, you have to build one cube out of regular sonobe modules, and the next cube out of 'mirrored' pieces.If you unfold the partially, you can connect them and they will interlock.

Oh, I've seen this site before.
And a level 4 sponge sure is a crazy project.

Since we're at it.. Here's some of my stuff made of sonobe units.
12, 30, 90 and 270 pieces for the balls, 52x something for the level 2 sponge so far.

I hope your ball turns out better than mine, stupid sheets weren't square to begin with, which explains the huge gaps lol.

Do you use sticky notes to fold your models? I love folding and assembling over 100 pieces models, but can never find enough square paper to do so.

I'm using simple sheets from noteblocks or w/e you'd call it.No glue on the sheets.
400 / 700 sheets, yellow, orange, pink and green, or completely white and somewhat cheap.
Huge disadvantage though, 99% of the time the paper is not exactly square, but it's good enough for things like sonobe units since these are very 'forgiving'.
