Persons are often saved in a defeault "scarecrow" position (straight up like a plank, arms wide). It's the default position, and the game applies the needed animations when you play the game. On monsters, Square often goes crazy. They fold all the body parts in all kinds of ways to store them in a "default" position. This is the Chocobo. All bodyparts seem to be seperate parts, so you could try to rotate them untill they are in a correct position. I don't have the time to do a papercraft model right now (no time for a good one I mean, and nobody's waiting for a crappy one...). But for starters, the model and the seperate parts just need to be rotated to the correct positions. It's basically all the animation sequence does too.
