First I'd like to say, that's a pretty stupid assignment for a job interview... Kinda like that question "what would you do with a million ping pong balls?" They can't really expect that to be a test about your creative skills and how you handle unsuspected situations... (well they can, and they probably do, but they're stupid for doing so; I'd go apply somewhere else).
I don't really think making a papercraft out of it will impress them (well, they came up with this question, so in your defense, they'll be impressed pretty fast I guess...). But what you'll basically be showing them, is that you are able to instead of a regular paper sheet, you can put a grocery bag in your printer device... If you really want to do this, origami might be a better way to go than papercraft.
If you still want to work there, put 50 bucks in the bag and hope it's enough.
