What's the best GSM paper/card to be using for general paper-craft?
Obviously standard 70-80GSM copy paper isn't up to the job.

Most people use something between 120-200 gsm, but it's a personal choice, so you really have to find out what works for you.

You'll find a lot of people suggest 120gsm, I personally use 190gsm because it just makes the final product that much more solid.

Anything beyond 190 gsm is difficult to cut and mostly likely to give you RSI (Repetitive Strain Injury) not to mention difficult to fold.

Not is you use a knife instead of a spoon. You sure you're not mixing up your gsm with your lbs..? 190 gsm (well, 200 gsm for me since that's what they sell here, their supply jumps from 160 to 200 gsm) works perfectly. It's only 2.5 times as thick as regular paper. I've cut mm thick posterboard with ease with a normal breakaway blade. When I had to cut 3 mm posterboard, it became quite difficult so I just did it in two goes. And yes, 3 mm thick posterboard would be difficult to fold (top layer stretches and bottom layer creases) 200 gsm cardstock folds just fine.
Only thing is, it's more expensive than 160 gsm and 120 gsm and 80 gsm. ;)

I'm talking about the silver card I used to make this Silvine model. It doesn't say on the packet what gsm the card is but had a hell of time cutting it. I used X-Acto blade, it in the past I used a scalpel and my hand hurt for days.
Normally use 135 gsm sketch paper or 120 gsm matt photo paper. 190 is for hako or robot models.
