how you making the uv maps like that? im assuming ur using maya?

The model or the planes? The model, I'd unwrap like any model in the UV Texture Editor but for the planes, you'd want to go to the camera you want, View->Image Plane->Import Image. You can adjust the image planes location and scale in the camera's channel box.

ah ok would you have any advice for making uv maps from scratch? or if there is an easier/ stand alone app that just covers that? i primarily use solidworks all mechanical stuff for 3d/ and learning silo (as my alternative to Maya) but i dont understand how you create the one flat image that "falls" on to your model.

I'm still just a student so I haven't had much formal training in organic texturing so I don't know the definitive way, but all I can say is get creative with chopping it up and how to lay parts on the model. It doesn't have to be one continuous texture. For this patamon I'm going delete half and create a cylindrical projection from the face around to the butt. This would give me a flat surface to paint on. When I get those right, I'll mirror it so both sides have the same UVs and I can just do one side of the texture and I can see adjustments on both sides when I make them. On it, I'll paint in the mouth, eyes, color division on the side, and the butt. The wings will all be one color so I can ignore the UVs and squash them down and put them on an orange space. Same with the legs.

I don't think there is stand alone application to use. I'm still a student so all I know is to use photoshop over a set of UVs. You could see if your programs allow you to paint directly on the model and let you save it out as an image. UVs never really fall on the model. It's just getting creative in how you unwrap it and where you hide the seams.
