I'm new to this papercraft business, so I am in need of advice. I want to build this model, can I use plain old printer paper? What type of glue should I use?

fucking copypasta.

wood glue, elmers glue, gluesticks, it really doesn't matter as long as you use it sparingly.

the paper is my main concern, though. will the printer paper be good enough?

no copypasta is truth.
just cause it's said over and over again doesn't make it true...

do what you want. it really doesn't matter that much...

it depends on the dimensions of the work...
For mini-papaercrafts(less than 6-7cm)normal paper
is better...
Cardstock(130-160gms)rules in every other case!

Of course you can, but wether or not you like the results, is entirely up to you; how could we tell you what you like to work with?
Try it, if you don't like it, try thicker paper.
