Well, the sets we use were actually DESIGNED to make it EASY to build simple representations of molecules. If you know what atoms to use on the molecule in question, that is. But that's not something you can blame on the building set, now is it? ;)
Anyway: only papercraft molecule I know of, and it's not like you can build all kinds of with some basic atom templates, basically just this one molecule.
