Regular paper will work; go for light cardstock for more permanent models. As the tutorials say, you may need to touch up edges with a felt tip pen or colored pencils if you go with thicker paper to get rid of nasty white edges.
Origami can be folded with almost anything, but specialty origami paper is sold in stores, and some complex models need large squares to have any chance of finishing, or a foil or tissue foil square. Once again, Google will help.
