What weight paper does anon prefer? I've seen recommendations for anything between 100-210g... has anyone trial and errored through a wide range and found one that works best?

I have found 160 works best for most things. Though I have tried 30 through 720. Basically, this is my use suggestions:

Really small papercrafts: 120
Most papercrafts: 160
Large papercrafts with long spans of flat space: 180 to 210
Interior supports: 720 - essentially very dense matte board

You know what sucks? Having to do conversions every time.
The U.S.'s stupid non-metric lb/ream system for measuring paper weight sucks.

I like em' sturdy so its mostly 180 or 120 double-face taped to cereal box stock but for small parts i use straight 120 and soften it by soaking it very slightly whit a foam based cleaner from the back to avoid streaking the colours too much

I've been using 65 pound cardstock for months, and it's been working fine.

You know what, I never realised in tiny little print next to it, it says 176 g/m^2. When I converted it to grams, it was insane, and Kg was a little off too. I thought 65 Pounds was just very light compared to what everyone else was using. Guess not.

Who'da guessed.

actually, we all use that kind of paper, not exactly that, but no one gets to far from that, unless it's fotographic paper, but still...

I use 160gsm paper for most models it is easier to work with, and unless the instructions call for heavier paper I found 160gsm great for most models.

Keep in mind really fiddly tiny bits like Belldandy's shoes and the support struts from the upper ore cannister on Kunn-Lan model looked so much better by using normal 80gsm paper !

All my models have been built with standard 20lb/75gsm paper. All my models so far have been character models under 12 inches and a terminator CPU. If I was to build something bigger or with broad flat pieces I'd buy something thicker but the 75gsm works fine for this size model.
