For some simple and beautiful origami I would start with origami birds. For some reason, they seem to work well with origami.
Some people separate origami into two types: Modular Origami and Representational Origami. Modular origami uses multiple pieces of paper in identical modules put together to make a geometrical shape. The representational type usually involves just one piece of paper. Many of them tend to mimic plants and animals.
There is a relatively simple origami fox in the book Origami Omnibus by Kunihiko Kasahara, but my boyfriend has the book right now, and I don't have it committed to memory. If someone else has it and can scan or take pictures of it, please post them here. After all, OP did give us an interesting motivational poster of a loli fox girl.
