While I myself am not much for papercraft, I still respect those who make it! My thoughts on the matter are that papercraft requires much more patience rather than talent, because unless you make your own models, all you're doing is building what someone else has designed as the instructions say. Still, patience itself could be considered a talent, since most people (especially me) don't have to patience to spend 2 months cutting out 60+ pages worth of parts to build Shinji's Eva.
Origami, on the other hand, requires a bit more talent than patience (though some models, especially the super complex ones, will push the patience of a lazy person like me). Even if you're following diagrams to fold someone else's model, many of us fairly experienced paperfolders will fold the model at least slightly differently to suit our own tastes. Doing that requires some knowledge about different folds and techniques, not to mention the fact that many of us also try to memorize various models.
tl;dr, Papercraft is more about Godlike patience, origami is more about memory and creativity. Have my rendition of Kasahara's Adam and Eve.
