Usually being new at papercraft or being a veteran doesn't really matter when it comes to wether or not you can build difficult models or not (I mean: it's cutting and glueing pieces of paper; if you can't build something, it's either because you don't have the patience to figure it out, or the template has been poorly designed).
more important is what kinda stuff you like: if you really like a particular video game, and there's a papercraft of that videogame, you'll probably be very motivated to build that one and have loads of fun doing so. Many /po/eple started with Snake in a Box which is somewhere on /po/'s pages. A good first thing to do is look through all 10 pages here and see if there's anything you like. And after that, there's http://www.3dpapermodel.com.tw/freedownload/download-asp/link.asp?ID=free and http://www.paperkraft.blogspot.com/ since those two link collection sites actually show you a thumbnail of what the papercraft is supposed to be. Andhttp://rs.4chan.org/?from=%2Fpo%2Fof course which archives all RapidShares from /po/, and Google. And lurking here.
