Very simple modular design, google 'Sonobe module'. That particular katamari is made using a soccer-ball design: pentagonal constructs (five pyramids around one vertex) surrounded by hexagonal constructs. 270pc, I think it was.

Chocobo has been talked of many times but noone seems to have a 3d papercraft template for one. We've seen pictures of ones made so it exists somewhere in someones hands!

That should give you a list of folds and symbols to help you with origami.

Also, to address the question about the open sink fold while you're downloading this, a sink fold is where you push in the paper based on a previous fold/crease. The "open" refers to the fact that the paper is loose on one side. If it were a closed sink fold, opposite would be true. To clarify, the open sink fold can be seen from where you pushed it in and underneath it as well, while the closed sink can only be viewed from where you pushed the fold in.
