If you select the "Create" option in the command panel to the left, you will get a floating panel that says "Create face" "front "back" and so on. The second row says "Line" "Triangle" "Face". Click Face instead of Triangle. You can now select four points instead of three. You can also select two adjacent triangles (hold down shift to select more than one at a time) and choose selected -> merge two triangles.
It's more difficult though, becuase a triangle is ALWAYS possible (it's why it's the basic of 3D modelling). No matter where it's three points are, if you connect them, you'll always get a good triangle. Not so with a face with four cornerpoints. If the two triangles aren't horizontal, you can still merge them and it may look okay, but there's actually a dent in your (sur)face... So you need to make sure you know what you're doing.
