I've tried using large sheets of thin metal for origami. The moment you have multiple layers in the same spot, the difficulty ramps up astronomically. Yet, it's still possible to make easy models if you have enough patience, and a blowtorch.
As for papercraft... if you have the patience to transfer a pattern correctly to metal, and have the correct tools to work it, there's no reason it won't work. As long as the geometry of the original model is good, the metal-craft model will work as well, if not better.
