Well, as for Paris, try to avoid the main tourist courses (d'oh). I was lucky enough that my girlfriend left me when I had a trip to Paris booked (lol), so I had the chance to stay there alone for a few days, met some locals, trained my crappy french and visited quite a few nice places.
If you can empathize with the locals, they may lead you to someplace nice, generally lesser known cafés, with an alive artist scene, and certain picturesque arrondissements which seem to have been lost in the past (and from the tourist guides as well!) - you might even get to feel the spirit from the parisienne that Doisneau and Cartier-Bresson captured in the past!
