You know, they have movies like 300 and the image included in this post where...
The colors seem MUTED, yet SATURATED at the same time.

Anyone know how to do this?
Is it that simple?
Or is it like, a physical filter like a polarizing filter or something?

its near 3 am and i only got a few hours sleep last night. here's the best i could do. all i did was push the levels a bit and the saturation of the channels up and down and such. then a bit of grain just because.

Its all post processing.

Sure I guess you could get the same results with film processing, but its way easier doing it digitally.

It's like the colours have been muted in the background and the water and people in forefront of the shot have been saturated++-ed

it looks like it was shot indoors. so i think the reason why the couple stands out, is probably from a different light source? the overall picture has a yellowish tinge to it

How to do in PS or AE, pull master saturation down (EG -50), push contrast up. But this doesn't look like its been done like that. Must be some other way.

300 was shot using blue screens. Of course they could have that kind of cinematographical effect.

for the photo in the op, all they did was expose for the flash so that it underexposed the natural light outside, there was probably very little proccessing on it, however for 300, heres a fairly simple way to recreate it in photoshop

Get your first layer, make a blank on top of it and fill it with 70% opacity black, erase the black over brighter areas of the face. Dupe the face layer and apply an unsharp mask(I dont remember the specific numbers) so that it becomes extremely contrasty, you will probably get really big halos around things, you can erase these if you want, or leave them. Then on this same layer apply a smart sharpen filter (again I dont know the numbers) that sharpens only tiny details, this gives a ton of micro-contrast, making every wrinkle/pimple/hair stand out. Next go into the color/saturation dialog and desaturate the colors one by one(no all at once, but blues, then greens, etc) and play around until you have a desaturated image with maybe one or two colors still popping out. Finally if you feel like it dodge and burn to give even more localized contrast.

I got some of the same effect shooting raw with strobes and just tweeking out colors in a raw editor.
