What are your general settings to go B&W?

Same, I just select the "Monochrome Mixer" box, and for "Preset" I have it set to "Monochrome with Custom Filter". I am on Aperture 2 though. I have never used 1, I dunno if its the same

Yep It's like going from iMovie to Final cut pro, lots of new features and a whole new interface. Actually it's more that the features have more adjustments within themselves. Like adjusting color saturation in iPhoto you just have the one saturation slider, whereas in Aperture you have control over saturation, hue, luminance and range of any single color, has an eyedropper tool to select. Aperture 2 also has really good retouching and cloning brushes, I don't think 1 has the cloning.

It does take a while, a few hours poking around and you'll have the basics down. If you want to learn it, just commit and when it asks if you want to transfer your iPhoto library to Aperture just do it. I took too long going back and forth trying to decide. I was using iPhoto and Photoshop CS before, Aperture eliminates the need for photoshop in many cases.

There are a bunch of video tutorials on the apple site you help you out too.
