So /p/, I need halp.

I'm taking outdoor photos in extreme sunlight, but if i underexpose then the shadows become black splotches. If i don't UE then the light spots wash out and become gheyasfuck.

Then don't shoot in extreme sunlight. Dynamic range of film/camera is not unlimited.

That's pretty much the definition of difficult lighting. It's recommended that you not shoot between around 11:30 and 1:30. Even better is a couple hours after sunrise or before sunset.
It's just an issue of balancing your exposure. In that kind of situation it will probably almost never be perfect. You just have to make a decision as to what you need to give up, shadows or highlights, and what works best for a particular shot.

Am I the only one here who almost prefers shooting at midday... the shadows on the ground like dark mirrors of the sky, the powerlines, traffic lights, the ground going dark right beneath trees, the languid look the hot sun gives to everything and everyone...

Besides, the color is more natural (than around sunset). Depends on what you are photographing though.

Yeah, it can, but so can everything. I really like what it opens up; for my taste and shooting style it's just as good as "golden hour."

Right, just a rule of thumb. Especially when shooting people, the harsh light is just brutal. For other purposes, it just depends, but is still more difficult sometimes. Although even just waiting until two or three, when the sun sets around eight, you still have strong light, but easier on the dynamic range.

I was out shooting a couple of days ago at an event outdoors. It was about noon and bright sun with no clouds. They set up a stage so that the sun and an ugly brick wall stuff was directly behind it.
