This might be an unpopular answer, but forget the flash. Well-diffused it'll look fine, but one on-camera flash still isn't going to give you anything really special. (Trust me, it's what I've got.)
Instead, try taking the picture outside early in the morning or in the evening on an overcast day. If it has to be done inside, look for a North-facing window; a south one will usually do just as well. Set up the baby opposite the window, and chances are 9/10 you'll get some really pretty light. Painters almost always set up their studios to have a window facing North for that exact reason.
