You set those, you set the iso, if you're using flash it doesn't automatically change the exposure to compensate so you have to underexpose based on what the meter tells you. That's it.That's all there is. Read your manual for specifics. If you're used to using A, S, or P, it isn't that much different on modern cameras. Ever since I learned exposure, I find the scene modes more difficult to use than M, because they do things I don't always expect, and it's easier to just set it myself.
