I work to a very simple rule, "If something can be done well back at home, don't do it in camera" This goes for all those settings in your cam for B&W, editing, and for me, filters when there not 100% required..
For sky, yes use them, but for general colors, 5 minuets in PS is a small price to pay.
But am getting anal now :P, work how ever you want, there is no "right" way,
