sponge tool
or put the part you want colored on a different layer above the rest, desaturate the bottom layer and the top layer will be unaffected.

Or, just put adjustment layer hue/saturation above the background layer.

But, as this is the most basic thing to do with photoshop, I suggest that you change to Gimp.

So, I made a path around the areas I want colored - how do I make that into a different layer?

Ok, figured it out by myself. Thanks, Anonymous!

Why does everythign have to be layers and masks with you people. Grab the lasso, the Magic wand or the Magnetic Lasso, select the area you want to retain color, Go to the Select menu > invert. Then hit Desaturate and you've got it.

Because layers are non-destructive.

I never use layers, and never save copies of the originals (unless I really mess with the photo), and never shoot in raw either.

OP PIC MAKES ME RAGE

IF YOU'RE GOING TO USE SELECTIVE DESATURATION, YOU COULD AT LEAST HAVE LEFT THE HAT IN COLOR OR SOMETHING, EYES IS CLICHE AND BORING, AND ADDS ABSOLUTELY NOTHING TO THE PICTURE.
