In your manual, look up the image optimization menu. If you shoot in jpeg, you want to get the shot as close to what you want as possible with in-camera settings, so that changes in post-processing aren't as drastic. Otherwise, yeah, some minor post processing is pretty much a given with digital. And that pic you posted does look like they might have been using a polarizer, moreso than turning up saturation Pic has no post processing, just in-camera settings.
