Anybody who ever really worked in a darkroom knows that what we do in photoshop isn't all that different from the standard tricks used during printing.
Also, digital necessitates color tweaks. We don't have the ability to choose film like we once did, so we have to simulate stuff like Velvia, and setting an absolutely perfect white balance is very difficult on many cameras without a good range of manual K settings, and even with them, it's impossible to perfectly judge WB on the tiny screen, as well as to adjust constantly from shot to shot when we're pressed for time.
