OP, I bought Hoya HMC Multi-coated UV and Polariser lens filters and they haven't negatively impacted my photos at all.
Actually, you shouldn't notice multi-coated UV filters as all they're supposed to do is take out that purplish haze you get on long shots. Plus, even the good ones are somewhat cheap and add a little protection for your lens.
Don't buy the cheapest ones though, the single-coating. The lens flare affect can happen with the multi-coat if you shoot straight into the sun, but it's likely to happen in more situations (not just shooting into the sun) with a single coating filter - the filter is only coated on the outside, leaving the inside more reflective and creating a subtle mirror-on-mirror effect inside the camera.
