It'll take perfectly good photographs. I'll let someone more knowledgeable take a comparison between the XT and XTi, but any DSLR will produce an image of excellent technical quality. (In other words, just buy the damn thing and take some pictures.)
I'd suggest starting with a 28mm prime of your choice as a main lens, the 50/1.8 for a portrait/reach lens because it's so cheap, and an 18-55 IS for wide angles and again because it's so cheap.
