k I'm a photo noob; what makes a picture not look so grainy when it's shot without using flash?

The camera's processor is not fast enough to handle the situation. You can fix this by overclocking it.

OP you are probably using the camera on automatic everything settings so try turning the ISO setting down a bit, it will be less grainy but darker. you can get programs that will remove graininess from photos and you can clean it up in photoshop,

Hai guise, I'm here to spoil teh fun.

Assuming you're using a compact, the ISO is why it's grainy and it's unavoidable if you're shooting in low light, and it really doesn't matter unless you want to print it at massive size.

You can filtrate it with things like Neat Image or Noise Ninja.

to fix, use longer exposures, image stabiliser, faster lens and/or lighting
