I use white posterboard for the background. Actually, you generally use white paper for people too- it comes in large rolls. Glossy or matte doesn't matter, but you need a smooth surface. Wrinkles will make shadows that will require more effort to hide. The key is to keep the background sufficiently brighter than your subject that all of the detail is blown out. Generally 2 stops over the foreground is sufficient.
For lighting, I prefer at least a two strobe setup with a couple reflectors. If it's just for an ebay auction or something, I may just use a single flash bounced off the ceiling with a reflector or two to fill in shadows.
Focal length and aperture depend on what you're shooting and what you want it to look like.
