Essential lens: EF 50mm f/1.8 II. Every Canon EOS owner should have one of these. It's a moderate telephoto on your XT (slightly shy of the telephoto end of your kit lens) but much, much faster. If you have a bit more money, I'd also recommend the 35mm f/2.0 (or, even better but even more expensive, the 28mm f/1.8).
All of my shots are taken with the kit lens, the 50/1.8, the 35/2.0, or the 80-200mm f/4.5-5.6 II (which I scored for $45 at a flea market).
Attached is a shot I took last time I was down at the falls with my 80-200.
