HDR is a process applied after the photo(s) is taken
Most people use multiple shots (or 'bracketing') at different exposure compensations and then combine those images in Photoshop to get a HDR result.
Any camera is 'capable' of being used for HDR, but having the ability to bracket shots, adjust exposure comp and shoot in RAW are extremely desirable.
