Your main choices are the Nikon D40 or D40x and the Canon Rebel XT or XTi. There are a few others out there (Sony Alpha A100, Pentax K100D, Olympus E330 off the top of my head). Those of us on /p/ except for the few who bought one of the littler brands love our Canons and Nikons. Those who bought the littler brands argue voraciously for them, but never get anywhere.
Don't get the D40x. If you want to go with the Nikon system, get the D40. The extra pixels of the D40x aren't worth the extra cost--it's basically just in the lineup so that Nikon can compete against Canon with an entry level 10MP SLR. On the other hand, the XTi actually does have advantages over the XTi beyond just higher resolution, so it's a valid choice over the XT.
The two systems are close enough in capabilities that the main decision you have to make is which one you personally feel more comfortable with. Go down to a store that sells 'em both, try 'em out in your hand, see which one you prefer. Then, buy that one.
