>>66417 It is usually better to convert from colour into b+W in post. Although you are correct, simply desaturating the image does not give anything akin to a "classic" black and white image, due to the lower red sensitivity of normal B+W film emulsions.
My method is RAW->8 bit TIFF, then use the channel mixer in Photoshop with the monochrome box ticked to achieve the basic look you desire. Finally play around with the levels tool for the amount of contrast you want.
