rather underexposed

you can fix some of it in shop, but you'll some image quality, more so because you're bringing up the exposure instead of down.

Take the levels and give it some true whites. Then take the curves tools and fix the clouds. Mask that adjustment layer to make it only effect the clouds and bam, your done.

Composition wise, I would've liked less space between the bottom of the image and the goats.

Duly noted. I was thinking the same sort of thing myself. I think I should have shot it in landscape too, and used a higehr f-stop to get all of it sharp. Sheep btw, not goats.
