Basing this 100% on ergonomics. All have good enough image quality.
XTi has only one control dial, which is pathetic but par for the course on entry-level DSLRs. There's only one button to control both shutter speed and aperture because Canon is too cheap to stick one more button on the camera and too greedy to let anyone who cares buy an XTi instead of a x0D.
The viewfinder is worse than that of any non-four-thirds camera I've looked through.
The 20D and 30D have awkward grips, as the XTi does, but good viewfinders and two control dials.
The 40D has a good grip and viewfinder, two control dials, live view, and a much quieter shutter than any of them.
