Why don't these JPGs look as vibrant as the CR2 files look in Lightroom??? I exported as sRGB, so I don't think it's a color space issue, but all JPG files I export from Lightroom look dull compared to the originals.

I figured out the problem with Lightroom. I had a "calibrated color profile" selected in my Display Settings in Windows. Lightroom displays the picture using that profile, but Windows Image Preview apparently ignores the profile when displaying the images. I changed the default profile from "calibrated color profile" to "sRGB Color Space Profile," and now the exported images and images displayed in Lightroom look identical. Unfortunately, the "calibrated color profile" images looked better :-(
