On the Canon 40D, it can take 3 pictures at once with the WB Shift/BKT setting. But this only appears to change the colors...is it possible to maybe have it take 3 shots at once with different settings. such as if i set/register the C1, C2, C3 and want to snap all of those at once?

AEB, it's under your menu. You can bracket to expose for -/+2 EV.

Just shoot in raw and use CS3 or Lightroom. Unless you really suck at shooting, you can correct the image. If you already take a good picture, you can fine tune it to exactly what you want.
