Whats the best technique for "colorizing" a B&W photo using Photoshop/similar?

Any particular reason why that one so strongly recommends CMYK? It seems to work pretty well in RGB.

I also found it funny that he was so worked up about that, but never actually said why.

I'm going to guess that he just feels the extra channel gives him finer control of colour when fiddling curves.

Unfortunately it can also fuck you up whem you want to convert back to RGB for most uses.

CMYK is significantly easier to control because of the K (black) channel.

It can be difficult to fine-tune darker/lighter shades of the same color in RGB, but in CMYK you just drag the K slider.
