They do record discrete information about a scene using only two possible states (exposed grain vs. unexposed grain).

While it's true that they're analog (in that they record continuous, non-discrete values on the magnetic media they used), it's also true the film cameras are analog (in the more general "not digital" sense that's generally used nowadays). And given how brief a blip on the photography universe still video cameras were, it seems a waste to bother coming up with terminology to refer to them.
