I'm ignorant about processing film. Other than putting a colored filter in front of the lens, does film have an equivalent of grayscale channel mixer that digital has?

color filters are the equivalent. but the development also isn't as important as the printing is. that's where the photographer's full suite of tools comes in, and why photoshop is so named.

I used a yellow filter. you don't need to mess as much with b/w film photos as with digital (digital BW sucks: small dynamics, muddy darks and clipped highlights)

development is critical as well. I almost never print, always scan. you develop a bit flatter for better scanning. I choose my film/developer combinations carefully so my scans only require little adjustment.

printing photos is hard, but just like Photoshop, you need a decent exposure/development to start.
