The FZ8 is all around the best you mentioned; however, with any Panasonic camera you're going to have to process the raws yourself because the JPEG output is shit. Otherwise them and Ricoh are the best companies for high-end small sensored cameras.

I use one as my main camera since I, too, don't like SLRs. However, if you don't want an SLR just because you feel you'll be limited, TBH I just have a superzoom for the handling. I almost never take it past 14.5mm (90mm equivalent) for general shooting, and even if I do go into the far tele range, it's usually either just to play around or not past ~300mm equivalent at the very most. Focal lengths in a reasonable range aren't a limitation to 99% of photography. If the FZ8 just went to that 14.5mm thing I wouldn't miss the extra tele range most of the time, and if it went to ~200mm equivalent I can say I almost never would.
So easily an 18-200 would do you, but honestly a 28 or 35 on a 1.5x DSLR and then a fifty (both will fit in your pockets if they're not some exotic variation on the theme) would work for almost everything you could think of. So if lenses are you hangup about a DSLR, don't worry. If it's some genuine dislike to SLRs themselves like in my case, go for the FZ8.
