I humbly request /p/’s help.

I am interested into getting into photography. However I am unsure what a good camera to get is. Now I have experience using family and friend’s standard point and shoot style digital cameras. I am looking for something a little more. Ideally I’d like something that I can use a wide variety of lenses with. A camera or camera and lens combination that’ll provide good depth of field would be almost ideal. What do you recommend?

Canon Powershot G7. I herd it's the dog's bollocks.

If you only have experience with point and shoot, then I'd recommend you to start off with something where you don't change lenses but otherwise have full control so that you can get used to the manual settings without having to carry around a HUGE camera and get distracted by RAW and lenses. I started out with a Panasonic DMC-FZ5 and I have never regretted it.

The S3IS is a far more versatile camera, and it has much better ergonomics.

Get one of the higher end digital cameras like Canon Powershot S3IS. Still a lot of zooming power, but it's more compact than a DSLR.
