The Pentax K100D is your best bet, since you seem to value stabilization (it has it built in to the body) and will probably want low noise levels. Noise is chiefly determined by the size of the sensor: the smaller the sensor, the more noise. Almost all point and shoots have small sensors; all DSLRs have large ones.
However, how quiet does your camera have to be at these conventions? If it has to be quiet, you might want to take a look at the two (?) point and shoots with larger sensors: the new one by Sigma and the old one by Sony. I don't know if they're stabilized, though. DSLRs are loud.
