Used Canon 350D (Rebel XT) or Nikon D40 or D50. There's not a huge image quality jump from the lowest-end (but still reasonably current) digital SLRs to the higher end ones until you get to the really high-end pro bodies like the Canon 5D or 1D, but cost increases dramatically for the higher-end models.

I would say probably anything used medium format. Particularly Pentax 645 and 6x7 and Mamiya 645. They're dirt cheap and still as good as they've ever been.

Only 1Ds and 5D are full-frame, 1D and all Nikons are still cropped. And full-frame isn't much of an advantage if you're not into wide-angle photography and don't need to swap lenses between film and digital bodies.

Full frame also gives you a noise/resolution advantage and the ability to shoot with shallower DoF.

(Though, at the cost of being able to shoot with deeper DoF..)
