IR instead captures more contrast in the foreground and ignores much of the scattered light in the air, So the clouds also have more definition / aren't as blown.
IR is great for days when taking pictures otherwise would be a waste of time, As long as you have a bit of layering of clouds, even overcast days can still have an interesting sky, and the light that makes it to the ground isn't as flat looking as in visible light.
