A couple of quick questions. With these "new-fangled digital cameras", is there any way to over expose the shutter? Or must I resort to 35mm? That having been said, how do I go about over exposing the shutter? Thanks in advance

yes you can

but you need to buy a circular polarizing filter and a battery grip.. the battery grip will allow you to overflux the shutter beyond default settings. The filter is also to trick the sensor, allowing you to under or over expose depending on how you align it on the lens.
