If I were outside near water, I'd probably make my camera more waterproof by putting a plastic bag over it. Also, a lens hood wouldn't be a bad idea if you had one. If you didn't, then I wouldn't worry about it too much, just as long as you don't shoot into the sun too much. As for your questions(?), always shoot in raw when you can, despite subject. High ISO is not necessary, but it depends on what effect you're aiming for. As for long exposure tips, a tripod is probably the only thing you'll need.
