Tripod, slightly slower shutter speed, ISO 100.

Did you use a tripod? If you did, you can also use the timer to eliminate shake from pressing the shutter button and moving the camera slightly. Long exposures need to be as steady as possible.

Focusing can be a bit of a bitch in that situation too. If you can use the screen for the live view while it is on the tripod to see when you can get the best focus, that will help a lot.

Is that the largest image size that Fuji can make? I know some of them can produce large files. Better for cropping and editing if you have the quality up full, even if it means less on the card.

All digital zoom does is enlarge the picture in camera. You can do it better in Photoshop or the Photoshop-analogue of your choice.

it also enlarges the image on the viewscreen, crops out all of the deadspace you dont care about photographing and allows the lightmeter to work if you dont happen to have a spotmetering mode.

Fix'd

The metering argument is the only one with any vague semblance of validity, but it's pretty easy to manually meter for the moon. A camera like the S5600 is plenty good enough to have a manual mode. Being able to meter it slightly more easily is not worth the sharp, *sharp* drop in image quality.

And if you don't think there's a drop in image quality, go ahead and click on the OP image.

I'm not entirely sure if it's possible for this model, but if you can, use a telephoto adapter.
