Play around with Canon's included DPP, it's decent for learning if you dont have photoshoop handy. Play around with the different sliders and curve controls, it's a good start. Also, for learning, you might want to try starting out with a .raw image, since they'll give you a lot more flexibility for this sort of thing.
You wont be able to recover that much white down there if that's what you're thinking : [
You could have possibly used a more underexposed image (could have used ISO 100 instead of 200 for instance) to produce a more useful image for postprocessing.
