I fucking love nuts. What is a reasonable amount of nuts to eat in a single day so that I'm not going overboard on fats? I know nuts are all full of good fats, but they still are not good in large quantities.

Pic related, as cashews are god-tier in the world of nuts.

Maybe one of those incredibly difficult to open packets? The ones that look like tubes. Sorry can't seem to find an image.
Whatever you do don't get the tins. They're lying, cheating bastards that will buttfuck you in the end.

And consider a switch to sunflower seeds. I don't even spit the fucks, Just chew and swallow.

Yeah, I buy the tins because they're always a better value and cashews are already expense as fuck (they're four dollars a tin when ON SALE).

The problem is I only eat them like five or six pieces at a time, but I do it practically every time I go into the kitchen. The serving size is 25 pieces and it has 160 some calories with 12 grams of fat, all of which is unsaturated except for half a gram. Granted, it's not really killing me since I eat sensibly for my actual meals, but I never keep track of how many of these fuckers I'm eating.

It's like I'm under the mindset of "Ok, they're good for me, it's like the opposite of eating potato chips", so that makes me feel like it's ok to not keep track of how many I eat.

Nuts are touching.

No more than 30-40% of your calories should be from fats, even unsaturated ones.

20 % rougly.

Also, a 100-200grams a day is ENOUGH. Regardless of type, and yes cashew is fucking delicius

I know that, I used to do the same (actually I recently did it, but stopped again). It's not good because, like you pointed out, you can't keep track of how much you ate. Either make daily portions or if it's some sort of "cheat food" for you just eat the whole thing on 1 day to prevent cravings which results in snacking on them. Face it, if you are losing weight - you didn't mention that, but it seems like it - high calory food every day isn't good.

Cashews are delicious. If you're consistently active, go ahead and have some. They have protein and unsaturated fats, so it's not as horrible as eating a bag of chips.
