Breakfast: Oatmeal + blueberries,
2 eggs,
1 slice whole grain toast
1 red apple

snack: handful of blueberries

lunch: 1 grilled chicken breast,
1/2 cup of steamed brocolli
1/2 cup brown rice

snack 2: 1 red apple

When do you lift? You should eat some proteins half an hour after finishing the weighs.
Overall, i think your diet is great, but maybe too low on essential fats (i'm not sure two eggs are enough). But just some olive oil on your salad should make the trick.

I workout weekdays, usually during the evening.

I feel like a fatass at breakfast with all this food on my plate-- even if it is healthy food. Will eating more eggs hinder weight loss in any way?

I don't think so, if you want professional advice, you should try to see a nutritionist. A simpler solution would be to change the chicken for fish sometimes (tuna -lol, mercury, i know- but once or even twice a week, a moar "fatty" fish like salmon).

That's a shit load of simple carbs if you're looking to loose weight. Drop the apples and blueberries. replace with nuts, or shredded chicken

Even a little tuna. And be very fucking careful that your salmon was caught wild and wasn't farmed. Anything with an Alaskan seal(like the canned kind) will have been caught wild. Farmed fish, while having the fatty acids you need, are loaded with bad shit wild fish aren't exposed to.

Generally fish that don't eat other fish will have the lowest mercury levels.

And be careful what nuts you eat, some are better than others. Almonds are good, I'd steer away from peanuts and cashews.

My personal tip? Eat when you are hungry.You don't have to stuff yourself, but in between meals, snack on fruits/veggies/nuts. You want to try to keep your metabolism at a steady rate so you don't hang on to anything your body doesn't need to hang on to.
