I go to the gym in the evening, which has raised the question if it's better to go before or after dinner. And if after, how long after?

Bullshit.

Load up about 2 hours (give or take 30 mins) with a big fat meal. Then go burn. Then have another big fat meal afterwards.

yea definately eat before and after you hit the gym. I work outside doing heavy lifting 12 hrs a day, get home eat a giant meal, hit the gym, then eat another giant meal. It might take a while to get used to it, you might puke, but its worth it.
