I want to start cycling for my cardio workout because running is beginning to bore me.
I don't have a bike though. Does it matter what kind of bike I get? I kinda like mountainbikes, would that be a good choice?

If you'll be using it mainly in town, get a cyclocross bike. They can accommodate fat tires like a mountain bike, but their gearing and geometry is like a road bike. They're also generally built tough as hell, too.

For cardio, you'll appreciate the higher gearing.

a mountain bike is good, but it depends on what kind of riding you plan on doing. if youre going to be hitting trails/bumpy terrain/offroad stuff then by all means get a mtn bike, but realise its going to be a lot tougher on a paved path or street unless you get slick tires. i prefer roadbikes because you can go omgfast.

i also took up cycling as an alternative to running/joggins and my knees thank me for it every day. so much better for you joints as its non impact. observe safety ie. wear a damn helmet, obey traffic laws, dont be a jackass etc.

Before you buy a new road bike, try to find a friend that has one you can borrow for a couple days, or buy a cheap one at a garage sale. Some people hate the ergonomics. A nice alternative is a flat bar road bike. If you go with your MTB plan try and get a hardtail with a fork that has a lockout if you plan on lots of street riding.

It's not so much the ergonomics as the fit. If he buys some random old road bike and gets uncomfortable on it, chances are that the drop bars will be the least of his problems.

Definitely mountain bike. Spend about £150/$300 for a really well made worthwhile one.

Warrantys are very worth having.

Make sure it's the right size for you.

Spend as much as you can afford.

please don't buy a cheap dual suspension bike they are usually very very heavy 22kg or more.
go for a hardtail they are more efficent for riding and a lot lighter

If you're getting pressure on your soft tissue down there, it's probably not as much the fault of the type of saddle or bike. More likely it's a problem with your position on the bike, which has to do with the bike's fit.

If you have a good fit, your 'sit bones' (ischial tuberosities) will be positioned such that they take your weight on the saddle, with very little contact on your perineum. Under those conditions, you can ride for hours. If you have a wide seat that holds your whole butt, you'll end up being about as comfortable after a few hours as you are in a coach-class airline seat.

while it is true that saddle position is important, the saddle itself is too.
There are HUGE differences in comfort concerning saddles.
How to find the one that fits your ass? Read reviews and try them out yourself.
I like those with a cut in the middle, works for me.
