My occupation provides little time for elaborate meals, so I've found myself living on these, water, and taking a few different multivitamins. Is this diet healthy, and if not what specifically am I missing?

Sure it's healthy, nutrition bars essentially provide what you need..i'd still at least try to have a normal chicken dinner or something every night

Yeah, I started eating Protein Plus Powerbars (23g) around 2-3 months ago when I started building.

At first I ate one after every workout which was just 3 times a week, but now I eat around 10-11 a week; one each morning + one after each workout.

I have Amazon.com ship 3 boxes to me every month for the 15% discount.

Your diet is fine as long as you're getting what you want out of it. I switched to a 30-35% protein diet recently so the bars are perfect for it.

(I hate protein shakes, could never get over my dislike for the taste...)

As for nutrition, those bars combined with a Centrum Multivitamin usually do the trick for me each day.

Negative. Those bars will get you into huge amounts of trouble. They're loaded with simple carbs and tons of sugar.

just don't replace your meals with them for the sake of all that you hold dear
