All heavy compound movements release anabolic hormones (deadlift, bench press, dips). Why? Probably because you are forcing many muscles to work together and this elicits a response from the central nervous system.

To paraphrase Rippetoe, no other exercise utilises the body's mechanics so fully and stresses the the body to express the genotype humans have inherited in the most natural movement pattern we have.

Squats are best to produce bigger muscles, better CNS development over these muscles, denser bones and tougher ligaments and tendons.

tl;dr - They are fucking hard and make you strong.
