Carbs, strictly speaking, are defined by their complexity. Simple carbs require no energy from your body to convert to energy. These include sugars and fruit sugars. More complex carbs require more energy for your body to process -- that is, you burn almost as many calories as your body generates. Some carbs, such as those found in some green veggies, are said to actually require more energy to digest than they produce!
This isn't taking into account other nutrients found in foods. While fruits may be comprised of simple sugars, they contain a myriad of nutrients and are very fibrous, so that far outweighs the simple sugar content.
