Healthy inexpensive meal:
50g whole wheat pasta per person (dry weight) 2 tins of butter beans, drained and washed (pic related) 3 cloves garlic, finely chopped 1 onion, finely chopped 2 tablespoons olive oil 2 tins chopped tomatoes Salt & black pepper (easy on the salt) Herbs like thyme/basil/oregano Squeeze of lemon juice Teaspoon brown sugar
1. Put the olive oil in a large saucepan and heat, add the garlic and onion and fry for a minute or so. 2. Add the lemon juice, herbs, salt and pepper, stir around. 3. Add the chopped tomatoes, stir around again, add the brown sugar. 4. Continue cooking the sauce for around 20 minutes on a low heat. 5. Allow the sauce to cool and put in a blender, blend until smooth. 6. Put the now blended sauce back in the saucepan and add the washed butter beans. Warm and allow the beans to absorb some of the
sauce. 7. Cook the pasta according to the instructions on the pack. 8. Mix together. 9. ??? 10. Profit!
The longer it is left before it is eaten improves the flavour, best if you make it a day earlier and put the sauce in the refridgerator. Each serving is about 400 kcal. Taste the sauce before the end, it should be mildly sweet (mostly from the tomatoes).
