You could do with a bit more protein, because being underweight puts you at great risk for losing muscle mass. As a woman, you should be concerned about this because more muscles equal stronger bones and healthier joints and you really really don't want to put yourself at risk for osteoporosis later in life. Do not think that that isn't a legit concern.
The best way to get good protein without too many phytoestrogens (the only downside to soy, too much can cause a hormonal imbalance in men and women that will increase the risk of cervical or prostate cancer respectively) and without seafood (since you don't like it) while keeping to low-fat foods is lentils. Buy some dal. They have plenty of fiber and protein and a healthy amount of good carbs. For me they are a major staple, but I was fortunate to be raised desi. In any case, they are easy to prepare, inexpensive, and versatile in cooking. Different varieties vary greatly in flavor but are all roughly the same health-wise, so if you don't like one shop around.
