Not healthy, OP, but delicious: scalloped sweet potatoes.
Use a mandolin/box grater/knife to slice your potatoes thinly (Maybe .25"). I don't know by weight how many you need, but enough to fill a 9"x9" square casserole dish. Let them soak in cold water while you make a bechamel sauce (google it, it's easy). Spread some of the sauce on the bottom of your dish, and then spread a layer of potatoes in your pan. Cover them with moar sauce, and then another layer of potato slices. Continue in this manner until you run out of both potatoes and sauce, but leave enough sauce to cover the whole dish. Bake covered at 375 degrees F for one hour, and then lower the temperature to 350 F and continue to bake for another half hour. Let sit so it can set up, and then eat.
