Hey /fit/ this is my first time here really.
I don't usually worry about staying in shape because I'm involved in sports and go to practice for 2 hours a day so that usually works out well for me.

Now that it's summer though, my family wants to take me on trips so I'll have a couple weeks where I can't go to practice.
For one trip, I'm going to Yosemite, so I imagine hiking might be a good replacement?
For the other, we're going on a cruise ship, apparently the ship has a really good gym. However, I'm kind of clueless as to what to do in a gym... so... halp?

How can you "not know" what to do in the gym? Most of the apparatus will even have instructions on it if you're really that clueless.

And if it's just for a "couple of weeks" then it won't matter anyway, you need at least 1 month of regular hard work if you want to see some kind of result.

Then do HIIT. Sprint for 30 seconds and then walk for 1 minute, repeat. If you can do this for 10 minutes then you're doing well.
