Our caloric intake will look like this.

I will estimate that my load, which is the bike, my weight, and the gear i'm carrying will weigh about 235lbs (106.82kg)

To estimate your daily calorie intake, first you must multiply your weight by ten in kg, and you will get your calorie intake to sustain your body if you were doing nothing. We will add this to the end.

If we average about 12mph, and ride in two hour stints, that means we will do 24 miles each stint, which we'll do four of. This means we will obtain our goal of 100 miles a day, over the course of eight hours of riding each day.

The average caloric intake for 12mph is 5.6calories per k/g an hour

so, (the weight 106.82 x 5.6 calories per k/g an hour x 8 hours) + (basic caloric intake of what you would be burning just by living 1068.2)= 5853.736 calories a day

well, fat has more calories per weight than protein and carbs so maybe increase the amount of fat you usually eat, just not too much

Forgot to mention, some of it needs to be able to be eaten on the go. We'll need to maintain at least 300 calories an hour on the bikes, so any form of energy bar or gel that happens to be cheap would be ideal as well.

We will be upping the fat content of the food we eat whenever we can.

That's what training is for. It's actually 1,200 miles in each direction, with a week break in between, so it's not that bad.

this might sound odd, but don't eat too much fiber. it's slow to digest and you wont be able to eat the amount of food that you need.. of course you should get some, but avoid things like the fiberone bars for example

This is exactly what you're looking for. Cheap if you buy the ingredients in bulk, high caloric density from the fat, and doesn't taste that bad if you make a non shitty native version.

Probably, but if I were you I wouldn't base the integrity of my food supply for two months on the advice of a random person on the internet who's only ever eaten pemmican during "guilt whitey day" in elementary school. Find an outdoor survival type forum and ask there, or otherwise get in touch with someone who's actually stored and used pemmican for an extended period of time.
