it doesn't necessarily have to vary from day to day, you can do one workout for a week, then switch it up the next week.
Some of the ab exercises that I like are the bicycle, crunches, situps on a decline bench, and leg raises, especially if you vary them. The standard way is just to hold your feet 6-8 inches off the ground, but you can also kick them up and down slightly, and open and close them. There are some bench versions that are good as well. Med ball sit-ups are pretty good too, and if you have a partner to throw the ball to, they're even better.
You have to remember though, it doesn't matter how many crunches you do, if you don't run (run meaning any form of cardiovascular exercise) the fat over your abs off, you'll never see any significant definition. If you want a six pack, you have to diet and do cardio as well.
