I'm in a workout (read: muscle building) regiment.

Is it possible to do a workout that induces sarcoplasmic hypertrophy, get the look I want, then do a workout that causes myofibrillar hypertrophy?

Because after I get the look I want, I want to switch to a workout that just increases strength, but I don't wanna keep gaining mass.

No reason you can't do German Volume training, for example, and then switch to 5x5s.

If you are comfortable enough to train on your own workout plans, you could even make your own routine that staggers volume and intensity workouts together. One day do 10x10s, and then do 5x3s the next time you're in the gym.

The fastest way to travel between two points is a straight line. You do that by using a 5x5 routine until desired size is obtained. You're most likely gonna be stronger than you intended at that point.
