You do 5 sets of 5 repetitions of an exercise. That means you do 5 deadlifts, take a rest, do 5 more, rest, 5 more, rest, 5 more, rest, 5 more and so on.
Also; 3 day split is pretty decent, so I'd say you're good. You can check http://www.exrx.net/Exercise.html or something to see if you're hitting all your muscles, or for some tips to round up your schedule.
