I've been to China, and effectively every Chinese person I met was beanpole skinny, even the ones who out-ate me, ergo Chinese food is not especially fattening. Of course, Chinese food in the U.S. has probably been beefed up a little, but is still less chubworthy than, say, anything from McDonalds barring the salads.
As for actual food recommendations, I suggest fried noodles or steamed rice and, if they have it, ma-po doufu if you don't have anything against a bit of ground pork in your spicy tofu. Otherwise, bakchoi/seasonal vegetables/whatever are good, along with fried mushrooms if they have any.
If you're still worried, buy some carrots and lettuce, you... you... goddamned fluffy woodlands animal.
