I'm not sure if I should start working out.

I'm fine with cardio, but I have some concerns with strength training.

Once I stop strength training, will the mussels and strength go away within a few months? Meaning that I'd have to stick to a routine for the rest of my life or else I'd just lose all muscle gains.

Takes about a year to start losing what you don't use.

Once you get to your goal what you want to look like I believe you can cut back to just maintain it.

well assuming you don't want to work out your whole life, you've got two options

1) never work out, never look good
2) work out and stop at some point, look good until AT LEAST that point

the correct choice is obvious to all but you it seems...

It's very easy to keep muscle compared to building it in the first place. as long as you still use those muscles a fair about and are not starving yourself you won't lose muscle fast at all.
