So I'm considering using an ECA stack while running daily, taking a multivitamin, drinking only water, and eating only chicken/granola. The goal is fat loss- after which I'm going to start up something like stronglifts 5x5. Anything about this need to be changed? Picture is unrelated, but animated.

Idiot, what your body uses for fuel depends on what it has access to, if you have lots of fat it's going to use that before your muscles. If you use your muscles the body will think hang on I'm using these to do stuff why would I eat them? If your sweeping generalisation was true muscle would always be used as a fuel first after carbs ran out and thus fat loss would only be possible when you had no muscle left and this is very clearly not true ergo you are a fucking retard.

Do the lifts first so you have bigger muscles which need more energy which burns more fat. Eating properly and not the retarded diet you mentioned will help

I was thinking something like half a chicken breast every 2 hours with granola in between. I'm aware there's plenty of other things I could eat, I'm just trying to think of something simple that would work. I haven't really come across a good long-term guide listing what I should be eating, I figured chicken would at least give me the protein needed so my muscles wouldn't deteriorate.
