Anyway, its just a measure of how many calories you burn per day simply breathing and pumping blood. 1800 calories per day is how many you'd burn if you were in a coma.
Find a vegetable you can handle, and make it a real one, and try to throw in 3 servings of it per day. You will get used to eating it, and in time will even crave it. Corn, Potatoes, Yams, Peas, Carrots aren't real vegetables in that they actually have some caloric value. Tomatoes and Iceberg lettuce also aren't the best as they are mostly water.
Aside from that I say just generally increase your portions slightly. You shouldn't ever be ravenously hungry during the day, if you are you're doing something wrong.
If you're even just lightly active during the week (say 5 times a week you take a 30 min walk at a moderate pace) you're going to want to hit no less than 1500 calories per day in my opinion. The usual 40/40/20 prot/carb/fat ratio is something to shoot for as well.
