It's just a birth defect, something of only like .56% of women and .2% men are born with it, most of which have down syndrome. No person in my family has or ever did have a geographic tongue, it's just some kind of freak genome mutation.
As for health, I brush and floss my teeth 3 times per day. The only bad thing is that since it's fissured, my tongue burns like shit whenever I use mouth wash, or so I'm told (as compared to the norm). It dosen't "develop", you're born with it.
