Will regularly playing DDR on the harder difficulties (about an hour a day) in addition to a normal exercise routine grind my knees into a fine powder over the years or just give me minor impact resist and more leg agility? This assumes no bar use, of course.

Stay on your toes and you won't have to worry about your knees. Only faggots stomp anyway. Also, you only burn an appreciable amount of calories when you start doing 9 footers like exotice ethnic or paranoia rebirth.
