Seconded, I seem to remember that the Shaolin Monks start at six with special stretching exercises that keep the joints supple for their entire lives.
If started later their joints would deteriorate like everyone elses.

I started karate at 12. My flexibility never really improved. Now I do BJJ where I guess it's a bit less important.

Well I would say that being able to master the movement of your body would definitly help in the long run. Plus you learn something that will likely be used at some time or another to save your life.
Go for it, we all can't be a kung fu genius that has been trained since being an infant.

as long as you have some sense of maturity and will actually try to do some of the stuff
