How much I can do or how much do I do for my workouts?

Bench press: I can bech 350lbs but for workout I do 5x5 with 275.

squats: My legs are weak and girlish so I don't bother, plus I have a slight knee fracture.

Dumbell press: 120 each arm 2 sets of 8

curl:150 2 sets of 20

push ups: 75max

you are forgetting anatomy. Some people have very long legs, making squatting heavy weights harder.
Having short arms and a barrel chest will help with benchpress for example.

if squats hurt your next, try doing front squats, with the weight on your upper chest. This way you don't have to lean over as much, and you don't have to tighten your back as much, should help your next.

narrow stance, wide stance, olympic stance.

there is plenty of variation to keep you squatting. i find what works with me is a low bar olympic style squat.
