The water would make your skin thicker, like being fat. That's what happens to women when they're holding water weight: they get bloated.
It wouldn't give you a gut or anything, but it'll make you look soft, like a doughboy.
Sodium's a tricky thing since it's in pretty much everything you eat or drink. Basically, I'd just take in about 1.5 gallons a day and you won't have to worry about sodium intake.
