the thing is sherbert is all sugar, when real ice cream has protein/carbs/fat which is much more ideal, it's practically sugared milk that tastes good. it's not up to me whether you eat ice cream or sherbert but from a nutritional stand point i'd say ice cream is the better choice if you're going to eat something sweet and frozen.
