How long does it take to lose muscle, say if someone has been lifting for a year, and had to quit for for a year, what would be the loss by the end of year 2?

depends on your nutrients on that peroid of none lifting, if good then all muscle should be burried under your fat gain

fair enough, variables are, doing more cardio (through cycling to a job, doing a manual job etc) and eating 3 square meals as normal (fast food once on the weekend for example) other than that, tuna, eggs, milk pasta etc etc
