My diet has been going great. Yesterday, I weighed in at 250, and now I'm up to 254. What the hell gives? Is this just water rentention? How long does this take to go away?

I don't need to explain my diet and exercise routines. I didn't eat 14,000 calories in one night, so it's impossible for it to be fat.

Water retention, recent meals, unreliable scale.

Don't judge yourself by weight until it reaches the 2 digit range. And even then, your weight doesn't matter. What does matter is your improvement in athletic endurance, strength training, etc., as well as aesthetic differences coupled with physiological differences that you feel.
