Protein is not stored in your body -- if you don't have muscles that want to slurp it up, it'll get converted to fat and stored or simply expelled. The 30 minute time limit is simply the time during which your body LUSTS for protein the most. So long as you're lifting weights regularly, your body will take full advantage of most the protein it gets, whenever it gets it.

This usually happens hours and hours after you work out and, depending on the intensity of the workout, lasts for a couple of days.
