Large amounts of fat is bad for you. Large amounts of any calorie is bad for you. Rice is a complex carb that burns extremely long, like pasta. It's been consumed by humans for fucking tens of thousands of years. If rice were bad for you, all Asians would be obese because it has been a cultural staple food for the entire Far East for a very, very long time.

Is it bad if you eat like 1000 calories of the stuff in one sitting and then do nothing? Yes, but that nothing to do with the rice itself.

Brown rice means it has not has the husks of fiber removed during the milling process.

Rice turns white when these husks are removed. Similar to how an apple turns white when you peel it.

The only difference between brown and white rice is about 2 grams of fiber per servning. You're VASTLY better off getting your fiber from vegetables or just drinking a fucking fiber solution once a day. Rice and pasta aren't very efficient sources of fiber, as you need to eat a lot of it to get a large helping of fiber.

That said, white rice is used because it cooks faster and has a much more appealing texture for culinary purposes.

And if you're that concerned about fiber, you'd be eating cereal like Fiber One every morning and not trying to squeeze fiber out of stuff like rice.

What about the vitamins/minerals/essential oils that get stripped off along with the bran? What about the insulin spike that you get with white rice? There's more to food than calories, carbs, and even fiber--you've got a whole slew of micronutrients to worry about, plus you've gotta consider how the body processes it. White rice loses on all accounts. Of course, white rice won't kill you (as evidenced by millions of people who have used it as a dietary staple), but it's not ideal either.

It also loses in the flavor department...white rice tastes like nothing, but brown rice has a subtle nutty flavor to it. There's absolutely no reason to use white rice when brown is now widely available (and often cheaper). People just prefer white rice because that's what they were raised on.

Far east asians don't get fat on high carbohydrate meals compared to westerners because their body's have adapted to handle it. But asians still get diabetes on an alarming scale, mainly because they gorge themselves on noodles and white rice.
