I find myself in similar situation OP. I want to hit 5000, but man, its hard to eat clean. Im up to 6 meals a day, lots of oats, nuts, whey protein, lean meats, fruits and veggies, blah blah blah. But still doesnt seem enough. Im spending a small fortune in food too, but hey, its an investment on myself.
My point is OP, just EAT. You will get used to it, and the more you work out, the hungrier you will get. A nice benefit of working out is that you can eat A LOT, which happens to be one of my hobbies.
tl;dr: eat more lentils, oats, eggs, beans, corn, pasta, etc.
