Bulk pack of chicken breasts, FTW. I get one big pack a week of 6, and cook them all at once (I grill them tossed in olive oil, liquid smoke, and salt and pepper) But cook however and have 1 a day, it makes it really easy to eat healthy if you cut down on the amount of time you have to prep/cook meals. Also one of my other favorite healthy meals is Penne pasta salad. Boil the pasta, drain, keep the water boiling, add carrots, green beans, and spinach (don't overcook). Give the green beans and spinach maybe 2-3 minutes, pull the carrots after 6-7 and toss with olive oil, dried parsley, salt and pepper, and some lemon juice.
