It's pretty easy.
1 cup oatmeal + 1 scoop whey. Roughly 50 g of carbs, 25g of protein, 450 calories. Eat this 6 times a day, and it gives you 2700 calories.
Of course, don't eat the same thing for 6 meals, but just eat something equivalent to that. A salmon sandwich with an apple is around the same amount of calories and nutrition. Chicken breasts with brown rice. Oatmeal and cottage cheese.
Just make sure that you're eating around 6 meals, otherwise you'll find it impossible to get all the food in.
