Basically I've bought new weights today, but I can't undo the spinlock. I usually lock it quite tightly everytime before I start workout, but now it's too tight to undo. I've tried everything I could think of. Any ideas how I can unlock it?

Also, what is generally a good weight to do the majority of exercises? I know it's adjustable but it's too much hassle for me to change everytime. In general I use 15kg per dumbbell for biceps and 2x dumbbells for chest, and 7.5kg for tricep.

Spray some WD-40 on it, first. If you had the strength to put it on there, you most likely have the strength to twist it the other way.

The thing is when I do it up, I use my body weight and spin the dumbbell in the right direction to tighten it. But now all I can do is undo one side of the dumbbell, the other side's spinlock is still tight.

there is no 'good' weight'. Load the dumbells until you can only manage 3 sets of 5 - 8 reps.

If use a hammer or another weight to slam the spin lock open, but i don't know if this is a good advice. :)

For the weight to use for the exercises: adjust it to the exercise!

WD-40 or lard on each one, turn each spinlock a little bit and alternate so they both can easily come off.

Misunderstandings! You've got the dumbell, which is the bar, and you've got the weight against which the spinlock is pressing. Try spinning that weight instead of using the spinlock's grips. The weight has a larger radius and will thus offer better leverage. Remember to go counter-clockwise, lest you tighten it, though!

Now, if I am misunderstanding you and the spinlock ISN'T wedged against a weight, then GL getting it off is all I can offer you =(

Protip like>>28674said. The weight plates have much bigger diameter so you cna get more leverage off them.
Get a tea towel (if you don't have gloves) and hold the bar with one hand. Use the other hand to try and spin the weight plates.
