Same here. For some reason kosher for Passover food isn't filling at all, regardless of how much fiber or protein is in it, so you keep eating and eating... And nothing really tastes that great, so you naturally go for the stuff that tastes better (aka sugary/fatty foods and rainbow cookies). I've been completely exhausted for the past few days because I've been eating nothing but passover shit.

Suggestion: Try to make sure to eat fruits and vegetables to make you actually feel full, and nuts for healthier fats and protein. Watch out for full-fat dairy products. As tempting as chocolate-covered matzoh is, try to keep that to a minimum. And of course, if you can, exercise.

Anyway, you're wrong. What you're describing is chametz, or breads leavened over 18 minutes with water and yeast. Ashkenazi Jews, however, refrain from eating kitniyot, which is pretty much any kind of grain whatsoever.

It may be hard, but this is a perfect time to kick-start a good diet. Eat tons of kosher chicken, eggs, fruits, and vegetables. It just means you have to go a week without any carbs. You can deal.

Might I also mention that kitniyot is not technically forbidden by any codified Jewish law. It's simply a custom, since Ashkenazi Jews used to be concerned that kitniyot could be mistaken for chametz, or forbidden grains could be mixed with acceptable grains in the storehouses or during baking. In modern times, however, this is pretty much impossible. Sephardic Jews don't follow this practice, and there is a recent movement to eliminate it. So, if you're okay with eating kitniyot, get your grains from corn-based products, like corn muffins, etc.
