Having just recently gained interest in health/fitness, I have a lot to learn.

I usually cook for the whole family. I recently replaced hamburger with ground turkey with good results. I'm going through the process of replacing whites with wheats to reduce sugar and add fiber.

1: Keeping in mind I'm taking small steps, what are some things I can replace or use as replacements for common ingredients?

2: What are some particularly filling meals (ie meals that you are unlikely to overeat on) that still taste good?

3: One member of my family is only able to walk for exercise due to an injury. Is there anything wrong with walking for 30 minutes 3-5 times a day with 2 hours minimum between each walk? Are there any eating habits associated with walking in this manner that would help this person keep off the weight?

We normally drink 0.5% milk. Sometimes skim milk tastes bad, and sometimes it's fine. I have no clue why this is as it doesn't happen with other milk.

half percent? I've never seen that before.

Good job involving the whole family.

For breakfast I love oatmeal mixed with dried fruits. Digests slowly and fills you up for some hours.
Soy milk is fine too.

Let him/her walk as much as he can. Nothing wrong with it, unless the injury is getting worse somehow by it.
She'll be burning some calories that way. If she wants to lose weight, she must make sure to burn more calories than she consumes. That simple.

Try and cut out all of the sugery pop such as cola etc and go to water, get flavoured water if need be.

If you're on whole milk try and go down to semi-skimmed if you can't go all of the way to skimmed

Fruit and vegetable juices instead of soda are a nice transition. Sure, they're still sugary, but at least there's some nutrition in there. I like the drink a cup of V8 Fusion every day. The Peach Mango flavor is a little weird, but I love it.

Use whole wheat ingredients whenever possible.

Whole wheat bread, pasta, etc.

More vegetables
