NO NO NO NO NO NO and NO. HIIT is not just interval training. It is its own category. What you're describing sounds more like Fartlek.
True HIIT is 10-20 seconds of MAXIMUM exertion, followed by 10 secs-1 minute recovery, depending on your fitness level. Thats one interval, so if you're able to do more intervals, then go for it. But if you really are out of shape, you shouldn't be able to do more than a few intervals.
