Is there an online resource where I can learn about diet and nutrition?

I mean something practical, with examples of what's good to eat (I'm already familiar with "DURHUR EET PROPELEE AND YU WIL BE HELFY!!!11 DIE-IT AD-VICE!"), preferably with cooking instructions?

The only cook-books I see are all to do with the exotic, hard to make, fattening, pseudo-takeaway crap, and there's nobody I can ask for help IRL.

get the mastercook deluxe. You can search recipes by nutritional value, ingredient, cost per serving, what you have in the pantry... etc. There's a torrent floating on the tubes.

As for what to eat: Tom Venuto - Burn the fat, Feed the muscle

It's great. Skip most of the chapters except the one about determining your bmi, bmr and of course any nutrition section.

Browse more cookbooks, there's one somewhere you can use. Eat a small dish of fruit after dinner, eat earlier (~5:00pm) instead of later, eat a bit less, run/jog, etc...

Cheese and crackers, drink some orange juice. Balanced diet right there
