is it overtraining if I go to the gym twice in a row (upper body one day lower the next), rest one day, then go back the next two? should I throw in an extra rest day every now and then?

if you can do the lift the same weight for the same reps/sets as a rule of thumb, you probably aren't overtraining

That's what I do to get ready for football. If you're not feeling rested the morning after your rest day, you need more time off.
