Age: 18
Goal: achieve a healthy body weight
Diet: nothing special, I eat with strict moderation, however
Workout routine: 30 mins. on elliptical every day, moderate lifting
Currently: 257, 5"10. Started at 282.

I haven't lost any more weight since a week ago, am I doing something wrong? Have I hit one of these fabled "plateaus"? Do I need to up the intensity of my workout or something?

Your initial weight loss is mostly just excess retented water being lost. Water is retained in fat tissue and as you exercised regularly your body cops the fuck on that it's not famine time and doesn't need to retain this water.

As you exercise more, you will lose less pounds per week as you build more muscle, which weighs more than fat.

Basically, don't worry about how many pounds you lose.

Your metric should be how much exercise you can do(you should be able to increase your exercise intensity every few weeks as your fitness increases) and how toned and bulked your muscles become, so keep an eye on your mirror and forget about your scales.

I agree. Just keep going - as your cardio-vascular fitness increases, you will feel more energised and be able to step up the exercise. The pounds will take care of themselves. It's also good that you're not on any particular diet - low fat and low sugar are the key things to focus on.
