Whats important is the fiber content, fiber acts as an insulin poathway medeator, and helps satbilize blood sugar levels, along with making you feal more full longer. Whole wheat (or preferably whole grain wheat) also has more protein then white bread, the whole wheat bread I use has the following nutritional values, as compared to white.
whole wheat|White fat: 1G|1G sugar: 1G|1G carbs: 7G|11G <- total non-sugar non-dietary fiber carbohydarates Fiber: 2G|0G protein: 4G|1G Calories: 50|70
Keep in mind that the white bread I'm comparing to is actually much healthier then most, and it has 20 more calories, 2G less fiber, almost twice the net carbs, twice as much sugar, and much much less protein.
Unfortunately finding whole wheat bread that is actually as healthy as it could be is quite dificult, even the stuff I used as an example isn't quite as good as it should be, it could have more fiber and shouldn't have any sugar.
