What do you guys think of a 5x5 lifting routine? Right now I usually do about 3 sets of 8 reps...

Depends.
Assuming you lift heavier when you do less reps and lighter when you do more reps.
You will be getting more strength from doing less reps on a higher weight.
You'll be getting more size for 7-10 reps though. Anything above 12 is endurance.

i started out with a 1 minute break between sets, but now that i'm lifting more it is somewhere around 1.5-2 min depending on whether i'm paying attention to my watch or not

i usually do light weights for 2 weeks, medium weights for 2 weeks then heavy weights for 2 weeks and then i will take a week off. I do cardio 6 days a week too.

i'm doing this now. much better than doing more reps. my lifts have gone up a lot faster. start low like they say and work up to build confidence. i've been lifting on and off for a few years so i started quite a bit higher than recommended.
