So, for HIIT, is it better to do an exercise that slays me quickly (burpees,) or one that I can do a high volume of for a longer amount of time, say jumping jacks? Is all that's important heart rate?

Can you actually do jumping jacks hard enough to get your heart-rate up that high?

For my money when it comes to HIIT, I don't like any exercise I can do for more than 30 seconds at full speed.

OP do burpees with the tabata time (20 work, 10 rest). You'll get through the first 4 probably fine, but by 8 or 10 you'll wanna die.
