so i'm going to try to start sticking to the stronglifts program.. but I worked out yesterday and I'm sore as hell today. I did the B portion of the workout. In theory, I'm supposed to do squats tomorrow along with the A portion. Is it a good idea to do this when I'm this sore? squats 3 times a week is quite demanding

Soreness is no reason to take a break. Exhaustion is completely different. Exercise can help with the soreness by rushing blood to the muscles. In a week, you won't be getting sore from doing the exercises, your body will have adapted.

i was just wondering if 1 day rest in between sets is enough for my muscle to rebuild as i do not want to overtrain

If you are eating right, drinking lots of water, and getting enough sleep you should be fine.
