monounsaturates and especially polyunsaturates are fragile and can break down easily. generally they are broken by heat and light. they have something to do with this shape, i can't find the pic i was looking for to compare exactly these three.
the polys are the most bent, the monos somewhat bent, and saturated is straight. translated as polys most fragile, and saturated as most stable in temperature change. they break at the bend, or something, and turn evil. if you really have to fry, fry with saturated oil, it will withstand the high heat. however be careful not to exceed the recommended daily intake
