What's an easy way of adding weight to your stomach crunches?

Grab a weight, hold it to your chest. Problem solved.

Medicine ball: hold it into your chest.
Plate: hold it in to your chest.
Dumbbell: hold it in to your chest/under your chin (if it's low enough weight)

Extend the weight over your head and to the crunches that way. That is how real men do crunches.
