A lot of people just like to do a 3-day split so that each muscle group effectively gets a week of rest anyway. That way you can be sure that you get enough recovery.
Personally, I do stronglifts, and stronglifts has a nice smooth system of progression, instead of really exaggerated periodization. Stronglifts maintains that it's okay to do squats 3x a week, and I believe it. Since I'm only adding 5-10lbs each workout, I find that it usually only takes me a day or so to recover anyway.
