I'm at about 200 pounds exactly and I need to lose about 20 more (I'm 6'2). I am trying to eat healthy but I'm a graduate student and have very limited time to cook meals n what not. The only exercise I get is that for the past few days I have been walking at a fast pace for about 2 miles.

What else should I do?
Do you guys have any easy suggestions for dinner? That seems to be my biggest trouble area. I always eat a small breakfast, a medium sized lunch, and then a huge dinner (full of carbs). Is the key to reduce the carbs maybe?

My entire diet is based around eating bread, pasta, cheese, potatos, etc.

These are complex carbs that will give you a lot of energy over a period of time.
So far, nothing wrong with them, better than simple carbs like sugar, who will only give a short boost.
If you want to lose fat, you have to take in less energy than you spend per day.
A grown up working man needs around 2500 calories per day, 3000 if you are a lumberjack.
Make sure you eat only 2000 to 2200 calories and you'll lose fat every day.

Oh yeah, reduce fat.
Less butter, less cheese, less oil, etc.
Don't stuff yourself with big meals, instead snack all the time on fruit and veggetables.
6 small meals are better than 3 heavy ones.
Heavy meals have the tendency to make you eat more than you need.
Chew! Chewing stops hunger.
Eat smaller portions.

How important is it to actually count calories and stay in that 2000-2200 range?

Also, does it really matter if I have over 1000 calories in a single meal if overall I'm still in my target range?

It is not that important, if you have a feeling for how much you need per day.
For a start it is a good idea to check how many calories the meals you eat really have.
There can be surprises sometimes.
After a while you'll just know how much you can eat.

A heavy meal over 1000 calories is not bad per se, but I could imagine that if you don't burn that energy fast enough, you'll store some of it as fat.
Again, eat small and often.

Thanks for your tips. One more question. Is walking 2-3 miles 4 or 5 days a week good enough or do I really need to be jogging/running?

If you were not walking last week and you start walking this week, but you keep the same diet, you will start to lose weight.

Walking is good if you cannot jog, jogging is good if you cannot run. If you are not a comfortable runner, you will not exercise very long and end up being less active overall, not to mention that most sports related injuries are from running.

As a grad student myself, get a cheap bike ($100 or less) and use the extra time you save travelling to go even further and faster.

Personally, I don't like jogging at all. It puts a lot of stress on your knees.
This is especially problematic if you are overweight.
So, by default I'd say walk.
Other options are swimming and biking, both do not put stress on your joints.

I'm too fat and gross to be in a pool haha.

I think I'll try jogging a bit just to see how my body reacts to it. I was 240 in August and now I'm 200. I think my joints can handle some jogging since I played sports my whole life till a few years ago.

Try to eat your big meal at breakfast and go down from there. Once I started doing this, not only did I feel more energized throughout the day, I noticed that I was less hungry throughout the day.

We're about the same. LAst year, I used to be like 235 lbs but then I literally starved myself and I've lost those 35 pounds somehow. But I'm stuck on 200. I guess you gotta kick it up a notch and start exercising. That's what I'm gonna do also.
