Before you read this, forgive me for my lack of jargon, this shit is hard to explain without lurking for over 9000 days or being a PE teacher.

Up until recently I never intentionally learned any theory on muscle building and I have a question about the differences between reps of motions and the holding of a motion.

I've always wanted to have my deltoids group contoured to the shit house so I started a lot of what I call "flaps" (they resemble me trying to fly by flapping my arms). Obviously they have a technical name but I really cannot be bothered finding it out at the moment.

When I first started I never worried about sets and reps and I picked up a weight that I believed I could do and then went at a reasonable pace until I was 'stuffed'. After becoming bored, I tried many things with weights; many different movements that targeted muscles I've never felt before and I started to hold the weight so that the muscle was at a state of constant compression. Is this a reasonable method for anything or am I wasting my time holding weights and looking like I'm being crucified?

TLDR: Should I be doing things such as holding weights with full arms extensions at shoulder height (like the letter T) to build "endurance" or tolerance to lactic acid or is it not worth it? What does it do exactly compared to normal reps?

What you are doing with a T form is called a Isometric muscle contraction. It means that during the form, the muscle contracts but does not shorten, giving no movement.

It's good for building strenght at a specific angle but it's not all you should do. You won't gain mass and a lot of definition. You'll only gain endurance and stability.

What you need to do is Isotonic muscle contractions where the muscle contracts and shortens, giving movement. Almost everybody does that in gym and it's the best way to get in shape.

You'll need to work your muscles that way and they'll get bigger and you will get definition that way and by getting low body fat %.
