Why is it that everyone seems to hate GNC?

I sort of got that feeling.
I went there a few times, and each clerk has a different idea of whats best, yet they gave some sketchy informatiom. Girl was saying I should take at least 200grams of protein a day if I want to maintain the muscle I currently have.
I took a sport nutrition class as an elective and my prof. told me that much would basically just strain my liver.

extra protein will put extra strain on your liver, but as long as you stay hydrated (like any athlete should), its not a problem at all. Have you ever heard of a bodybuilder getting liver damage from excess protein? Currently in the nutrition world, the stance is that athletes dont need extra protein, only extra carbs. However, they are just starting to turn the corner and reverse that logic. As a result, several people (such as your professor) are clinging to the old logic. GNC however is simply telling you this so they can sell you more protein, they have no idea whether its true or not
