Because they are the best exercise.
Seriously.
Your using more then just all of your legs to do them.
It is one of the only exercises that makes me break out into a full sweat just from doing it.
If your doing it right then it is amazing, and it increases your overall gains on everything else.

Squats are surprisingly hard to do right. I thought I got the form down pat after reading rippetoe and carefully scrutinizing a shit load of videos on the internet but apparently it broke down and I developed this bad habit of leaning over turning it into a sloppy good morning and noticed my lower back has been stressed more than it should for what is supposed to be primarily a leg exercise.

Once you perfect form, they are the most efficient way of developing muscles, because squats target a ton of muscle groups.

I did tabata thrusters for the first time about a month ago. I could even walk upstairs and open the door afterwards. I ended up crawling and taking a rest every few steps, that's how hardcore it was. (I have a gym in my basement).

I fucking love that feeling, I've ended up laying on the floor afterwards for long periods of time. Fucking amazing.
