People have different reasons for doing squats. The main benefits are increased lower body strength/mass, improved bone density, better hip/ankle mobility, and greater power for jumps and sprints. It's also speculated that doing this movement with heavy weights releases more human growth hormone and testosterone than any other movement.
It's obviously incredibly important for o-lifters and powerlifters as it is included in their sports. And as far as learning how to do them- I'm sure google will get you an answer for that more easily than I could explain.
