The only thing I couldn't figure out exactly was my tuna sandwich, I'm sure it has mayo in there but I can't be sure how much.

OP, do you exercise?

Don't cook eggs in oil. get that nonstick spray thing. or boil them for 10 mins.
Get some fish oil or flax oil caps it will give you few extra calories. If you are doing cardio make it 1800 cal, which is perfect.

I would also suggest oatmeal in the morning (200 cals for 1 cup) they are good source for carbs and fibre.

Yes, I exercise; I run 2 miles in about 16-19 minutes then lift for about 40 minutes all upper body. The next day I just run for 30 mins and it winds up being just over 3 miles.

I don't prepare much of my own food, which is a pain, I'm in college and the easiest thing is to get the eggs/corned beef hash/anything at a dining hall.

Will eating only 1500 calories be detrimental to my health?

It's not decremental but it will hurt your gains.

Someone around your size needs about 2000 calories JUST to maintain the bodyweight add few hundred that you burn during cardio and few during gym session about. Thats 400-500 total im guessing. So you need 2500 calories to maintain the weight with that routine, im not even including energy spend walking around college and other daily activities.

Anyways you will be home or off college during summer, correct? Bump the protein up to 150 g by adding some salmon (very little mercury), chicken breasts, low fat cottage cheese. dump the carrots, peanut butter if you want keep it under 2000 cal.

TL;DR If you're lifting weights eat more protein.

Alright well I guess I can stop eating so little then (at one point I thought it was a good idea to get 900-1000 cals a day). My most important goal is losing weight, I want to focus on that before anything and once I get some weight off I might start trying to get a bit more muscle. I'm not looking for bulk, just tone, but it looks as though I'll have to increase my protein intake regardless.

running will help your leg muscles grow...up to a certain point like most bodyweight exercises i.e pushups, bodyweight squats, pullups. unless you start increasing the intensity with which you run.

the goal of a long distance run is to strengthen your cardiovascular system, not for muscle gains. why don't you gain muscle you ask? well it's simply the nature of the exercise, youre teaching your body to sustain a certain speed for a long period of time and in order for your body to do that it'll have to optimize it's muscle size and heart rate.

if you compare sprinters and marathon runners, you'll see that sprinters are a lot more muscular because of the intensity at which they run. below is a pic of marathon runners.

No no no no no. Muscular definition is achieved by low body fat, so you can see the outline of the muscle through the skin. Bulkiness has nothing to do with it and "toning" is just a stupid word people made up to make women think that lifting using 2lbs dumbells with 20 reps a set will magically make them look better.

Also, running is not really a good workout for lower body strength. If you really think it is then I feel sorry for you. And I'm a long distance runner myself.
