Lowering body fat /defining abs. It is a LOT to do with diet, no doubt.

what mistake do you think most slightly overweight people make with their diets? Cheat meals more than once a week? Too much carbs from sugar (soda)? What?

I'm trying to redefine my diet, but I can't think of anything aside from the whole "protein + fiber + veggies and fruit + water" thing

The only actual mistake you can make is consuming more calories than you drop. Sure carbs play a role, but it's not that significant. I had significant weight loss by exercising two hours a day, high intensity, and eating a chicken sandwich, large fries and a diet coke from wendy's. I knew by the nutrition facts that the caloric content was under a thousand, giving me the same results as if I had forcefed myself salads. That's basically it. Work up a sweat you wouldn't normally, and eat less. No magic to it.

I have no willpower either. I just boiled it down to science. I wasn't working at the time so my body was stagnant. My routine was this: wake up at about 12 pm, go to the gym for two hours at 3:00, come home, eat wendy's. This filled me up "midday" so I didn't feel the need to eat later or earlier. By the time 3 AM rolled around, I was too tired to feel hungry. I remember my stomach was empty. My ass was full of water. Works though. I lost 40 pounds with ease.

Calories is a big factor sure, but when and what you eat is just as important as how much. Let's say person A eats only one meal a day consisting of 2000 calories worth of donuts. Person B eats 2000 calories a day spread over 6 evenly spaced meals, each one being well balanced consisting off fresh, natural foods. These two people will not see the same results.

the most common mistake is that people think they could actually change something by just adjusting their diet without getting off their fat asses and doing some cardio

Technically you can, but cardio is essential for definitive results.
