If you want muscle mass, then protein. The rule according to my wrestling coach was 1 gram of protein per 1lb of body weight. However, you can only process/digest, whatever term you want there, 30 grams of protein at a time. Make sure you have protein shortly before a workout, and right after if you want to gain muscle mass.
However, know this: I forget the exact number, but I believe that it was only 20% of males can actually get huge/buff without the use of steroids. I used creatine for a bit, and although it burned on the way down, it helped me out quite a bit.
However, if you just want to get fat, then sprinkle some doritos on chocolate ice cream. and eat that until it hurts.
