You squat down as far as you can with your heels on the ground, it's not really that complicated until you add weight and even then...

Actually, my coach told me that if you squat below parallel, you're going to ruin your knees.

Your coach can't squat. If you can't go past parallel because of flexibility, it's a different story, but if you can deep squat freely then why limit the ROM.
