As a climber, mountaineer, backpacker, and hiker, I've found that for sustained strenuous outdoor exercise, the best thing is actually 100% nylon running shorts.
They're built for runners, which generates a lot of sweat and will naturally bunch up boxers. They take sweat and moisture in general pretty well. If you end up in a place where you aren't able to get a clean pair every day, they work perfectly. They dry quickly and don't chafe or get messy when they get dirty. I've had to use a single pair of InSport running shorts as underwear for three days straight while on a mountain and managed to stay comfortable.
At one point on the second day I was in a harness and roped in, in the middle of a glacier. Long story short, I was in a dangerous place and had to piss my pants. It dried up pretty quickly and smelled horrible but given the circumstances it still wasn't that uncomfortable.
To train, one-up it. Get into running up hills. Start with small ones and move on to larger, steeper hills. It's a pain in the ass but really works you hard.
