No, you may not do anything else unless it's specifically stated in the plan.

Your traps will get plenty big doing deadlifts/rows. If adding exercises would benefit you in any way, they would already be in the 5x5 program. The program is fine how it is. Once you get stronger, then workout for aesthetic reasons
