Actually the complete opposite, I would imagine an activity like Fencing would be lacking in actual resistance training, and more like a form of cardio. Such long bouts of it, or any type of cardio, also catabolizes muscle.
You'd note that if you look at cross-country runners, in comparison to say sprinters, the runners almost always will have a much lower amount of muscle mass. That isn't from them eating less, or not wanting to be muscular, it's simply that it's nearly impossible to retain muscle while doing such activity, without eating a shit-load of food. Even then, that might not save it.
The only way to retain muscle while cutting weight is hard resistance training (or steroids). This is why bodybuilders tend to shy away from cardio, and instead manipulate their diets. The muscle they have burns up so many calories, they don't even need to perform cardio. Some of them, anyway.
