Any mercury found in food is always compounded with some other element, most likely in a inorganic compound. Elemental mercury by itself isn't very harmful, but when mercury forms one of its organic compounds is when it becomes deadly. The real danger with mercury is that the inorganic bond will break and an organic compound will form inside your body. But that's pretty rare.

it depends on who eats the tuna. mercury has a bigger effect on child growth, so especially for pregnant women and children it is not advised to eat any at all. For normal people i heard it was maximum two cans a week? someone should find a better source, i can't exactly remember.

Anyways, mercury accumulates in every fish, but when a predator eats the fish, they get all the mercury in the prey's body. Tuna just happen to be one of the top predators. Other fishes like sardines and such are no cause of concern for mercury poisoning.

I'm partial to the Starkist yellowfin tuna in olive oil. It's perfect to throw on some mixed greens along with some cherry tomatoes since the olive oil acts as a dressing. It's also a good addition to homemade tomato sauce. Saute some onions, add the tuna, add a can of diced tomatoes and simmer. Add fresh garlic and pepper to taste.

When I was in school, I had a tuna sandwich almost everyday for lunch (sometimes egg-salad sandwich). I never got sick of those two, and people questioned me on how I could eat them and do it so often.

I have always liked canned tuna fish. Though I would try to keep it as a snack instead of a meal.
Try mixing it with mushed up red kidney beens and then putting it in stone ground wheat crackers with some hot sauce.
The taste takes some getting used to but its a great high protien low fat snack. That you can spread and munch while your on the go.

Mercury levels in fish in 2008 are lower than they were in 1950. Industrial pollution during from 1800-1940 and war pollution (1939-1955 [WWII+Korea]) did the damage.

Mercury levels have dropped like 85%. Tuna are also harvested at a fairly young age - mercury risk grows with the longer a fish lives (and consumes other fish, etc). The fish with the highest concentrations are shark and sword fish. They are still ok to eat 2-3 times a week.

The Japan shit was in 2 isolated incidents that were BOTH related to Japanese Industrial Waste Poisoning - shit was dumped right into the bay, people ate the fish out of the bay, they got sick.
