I have been running a lot lately, to the point where I have a gimp coming down stairs and my ankles are wrecked, I just tried running and it was an absolute joke. What are some cardio activities that won't involve my ankles much?

Ellipitical machine, rowing machine, or just do moderate weight at 12 reps at a fast pace with low rest periods.
