I currently weigh about 250 and want to get down to about 180. The problem is that I am a mesomorph and so, whenever I try, I tend to add on so much muscle my weight just swings around 250.

Any tips of exercises to build lean muscle and burn lots of calories?

Shut the fuck up, you don't add so much muscle your weight stays the same.

You want to lose weight? burn more calories then you put in, and I guarantee you will lose weight.

Tip 1: Running. It is good. Try it.
Tip 2: Swimming. It is getting out of season in the north, but most YMCAs tend to have an indoor pool for members.
