A lot of advice on here says you should do repetitions until you literally cannot do another one.

Is this right though? What about that rough scale saying 1-5 repetitions= muscle strength 6-11= muscle bulk etc?

Strength is a general term referring to ability to move weight with your muscles. Power refers to the ability to condense this force into the shortest period of time. So someone who "strong" in upper body but whose muscles aren't trained for power wouldn't be able to punch as hard as a physically weaker boxer who can contract his muscles faster to generate power.

This is, of course, ignoring the fact that the boxer might know how to throw a proper punch and the physically stronger guy might not.

But that fits under power anyway, since the power is generated through proper motions of the hip, arm and shoulder.
