Eat your tortillas, bro. They have plenty of carbs, but that shouldn't be a problem considering you're not trying to lose weight - Just maintain.
For your breakfast, I suggest your lose the sausage, save the apple, and some juice in a container and have it some other time as a snack. You don't HAVE to lose the sausage but I find they usually contain a lot of fat. Not a problem if you don't go over board a day, but that's just my opinion.
Also, I would say, yes, you're asking the wrong crowd. I've been going to /fit/ for quite a long time now and the more and more you pick up on nutrition and how your body works you begin to realize that just about 70% of people on this board give either false or just plain-old-bad-advice. Nobody can really tell you what you HAVE to be eating. The answer is too complicated; It can't be answered by a simple input on your part.
This board is full of bullshitters who think they know a thing about nutrition - Always giving advice that would only be fit for someone either trying to lose weight or bulk-up.
But as a person whose actually been through this mess I tell you, eat what you've been eating. You say you have a high metabolism and that weight-gaining isn't a problem to you. As for your question - Are tortillas healthy? They can be. Chances are, they're a lot healthier if you make them at home as they wouldn't be packed in preservatives and sodium. Whole grain tortillas are always very hearty.
