When you get home, cook large amounts of chicken and turkey breast. All you have to do is take the frozen kinds you get at the supermarket and plop them in the oven for like half an hour. While they are cooking, take some vegetables ( i prefer romaine lettuce, broccoli, tomatos and carrots) and just chop them all up into a huge salad bowl. Take handfuls of ziploc bags and stuff them full of the salad. Put these in your fridge. Next set out a bunch of slices of good, whole grain bread on the counter. Take a nice dressing made with good fats (non hydrogenated soybean, canola, olive etc.) and spread some on one side of the bread. When the chicken/turkey is done, put a couple pieces on the other side of the bread. Sandwich them, and put them individually into ziploc bags. Now whenever you need to pack a quick lunch all you have to do is grab a bag of salad and a sandwich and youve got a perfectly balanced, nutritous meal. Total elapsed time: 45 min or so (not taking into account time at the supermarket of course) for an entire weeks worth of meals.
The idea is to buy in bulk and cook in bulk. Honestly dude, it's not that hard.
