I'm 6'1" and I'm not sure what the appropriate weight for my height would be. I see guys posting stats like 160 lbs. and 180 lbs., and it seems like they would be as thin as rails, but they actually look pretty toned.

I'm about 208 lbs. right now, having lost 75. My initial goal was 180, but looking at my body now, I'm not sure that would be enough to cover the excess weight I'm carrying around. Now it seems like I would need to be closer to 160.

Kinda depends what you're going for, man. I'm 6'2", weigh 190, and have 9% body-fat. Poster-boy mesomorph, basically. I played rugby with guys the same height as me, but weighed 230 and were built like fucking sandbags, just straight-up dense guys. Also know guys my height who are lanky SOBs. 180, providing you have a low fat percentage, would have you pretty toned and muscled, but not bulked. What are you going for - big muscle, balance, lean and rangy?

I don't want any visible fat, I want my skin to be tight and healthy, and I want to tone-up slightly. (not build much actual muscle, but have a little bit of visible detail)

I'm 6'1 and weigh 185, but kind of have a beer belly. Basically, were I to lose the fat and gain muscle, I'd probably be around the same weight. Basically, everywhere from 170-190 makes sense. It all depends on your muscle mass.

I looked like a fucking pig at 188. Now I'm down to 160 and looking pretty good.

i'm 6'2", 170 pounds, low body fat. it's enough to have a six pack and adonis belt without flexing, but overall i still feel very "skinny". i'm shooting for ~185 and keeping my BF% low.

only advice i can give you is keep eating healthy, and keep hitting the weights. as long as you keep your BF% reasonable you will look good anywhere between 160-200.
