Wouldn't it be possible to have a diet of fruit? I'd love to get up, eat a couple of bananas, then at lunch some melon, apples, peaches etc, then for dinner again, but perhaps different fruit.

Con wise I can mainly think of:
-Little to no protein
-Mostly "short" carbohydrates
-Fruit gets expensive
-Need constant supply
-Crap in non-organic fruit

I am so willing to try this, but cheat with a whey shake a day or something to keep protein up.

Can /fit/ think of other cons or why it wouldn't work long-term?

Very possible - It wouldn't be a problem to maintain.
Getting OTHER essential nutrients might make it a problem. I suppose if you gobble-down on some avocados and take some supplements in between, sure, why not?
