What would /fit/ recommend for a good work out to get in shape for Muay Thai kickboxing
and what kind of a diet

Just take a Muay Thai class, I'm sure they will be able to tell you what exercises you need to focus on. Besides, how are you gonna do Muay Thai without taking a class anyways? Gonna learn from youtube?

You'll need someone experienced to look at your fundamental shit. Who knows, the punches and kicks you're practicing out of youtube may have the wrong form, and will end up hurting yourself more than anything else.

i just took a break for 3 weeks because of school and wanted to be in better shape than i was in leaving. I guess i'll just ask my instructor...

For combat sports the most important things are:

Conditioning - can't fight if you're too tired.
Technique - can't win if you do it wrong.
Strength - will put you ahead if the other two are equal.

So do a MT class and work on your conditioning and technique. Supplement that with a little strength training (deadlifts, squats, overhead presses, or Olympic lifts if you are able to get coached).
