Quick-and-easy recipe time!

Croque-Madame

1 ham sandwich (you know how to make these, I'm assuming)
1 egg
4 tbs. butter/margarine
1 1/2 rounded tbs. flour
1/2 cup milk (skim, soy, whole, etc.)
1 tsp. dijon mustard (regular mustard works too)
1/2 tsp. salt
1 tsp. pepper
1/8 tbs. nutmeg/cinnamon

Melt 3 tbs. butter in small frying pan. Put in sandwich, cook 3-4 min. on each side or until brown. Remove sandwich, place on paper towel/napkin on top of plate (this soaks up leftover butter grease on the bread.) Fry 1 egg over-easy. Place egg atop sandwich.

Herb Chicken
Ingredients:
1 Cup Fat Free Sour Cream
3 Tablespoons Lemon Juice
1/4 Teaspoon Pepper
1/4 Teaspoon Hot Sauce
1 Clove Garlic, minced
6 Skinless, Boneless Chicken Breasts
2 Teaspoons Dry Mustard
1 1/2 Teaspoons Thyme
1 Teaspoon Paprika
1/2 Teaspoon Pepper
1 (5 Oz) Package Melba Toast
Cooking Spray

Directions:
Preheat oven to 375°.
Combine first 5 ingredients in a plastic bag.
Add chicken and shake to coat.
Refrigerate over night.
Combine remaining ingredients in a food processor.
Place 1/2 mixture in a bowl.
Reserve the rest for another use.
Remove chicken from bag and dredge in crumb mixture.
Place on a pan like a cookie sheet or an 11 x 7” pan.
Bake for 40 minutes or until done.

Recipe makes 6 servings

I make my own muesli containing granola cereal, rolled oats, raisins, oat bran, and wheat bran. Mixed, then soaked in skim milk for a while. Along with this I usually eat banana's/pears with it, and concentrate orange juice with pulp. On my way to work I'll drink home brewed honey and ginseng green tea.

This is my typical breakfast, that is all you get for now.
