Start a food diary. Yeah, I know, it sounds like a pain in the ass. But after the first few days you should start memorizing the calorie amounts for most foods.
So, just count your calories and see where you fall. It sounds to me like you could stand to eat more, but then again if you're snacking throughout the day you could easily be averaging out to 1500+ calories.
Also, check your BMI to find out if you're really underweight. Most people don't realize that being "skinny" or "underweight" isn't a bad thing. Seriously, in high school my BMI was 26 and I had people constantly telling me I needed to eat more and that I was too thin, etc. etc.
