Would I really fuck up my shoulders and arms if I carried 15lb weights in each hand as I do my daily 2mile walk every morning?

No. If it hurts, don't do it. You might start with lighter for a few days and build up though if you aren't used to hiking with a pack or anything like that.

Farmers Walk is a pretty good exercise for grip strenght. You`ll be aalllright.

Shouldn't be to bad for you, but take it slow and listen to your body.
Try going for only 1 mile walk with the weights and see how your arms feel the next morning.
If there really sore give it a rest, if its a pain that hurts more then normal dont do it again.

Weighted vests are said to be better

I plan on working up to 50 lbs in a backpack. It'll be a good mountain climbing pack though. It should evenly distribute the weight on my body.
