Potatoes are starch, starch is a kind of sugar, so am I wrong in guessing potatoes are not very good for you?

Eh, depends what you mean by good for you. What are you trying to do, lose weight or just stay alive? Don't go on an all potato diet or something, but if you want to eat a baked potato from time to time, go ahead. Just be careful on how much other stuff you put on there (i.e., butter, salt, cheese, etc.).

I like to cook chopped vegetables and stick them in a tortilla with some egg, and figure it's an okay way to improve my diet (losing weight). However, potato is the main vegetable (others are onion and green bell pepper).

Any other vegetables that would be good for that sort of thing? This isn't /ck/ stuff, I mean nutritionally without tasting awful.

Maybe throw in some julianed carrots. I know it sounds weird, but it tastes good as long as you cook the carrots together with the onion and peppers.
