I was reading this book, and it said that egg beaters have more protein and less fat. I saw one at the market with yolk added, and it was 40 calories per 1/4 cup. I want to try it out, but I'm not sure how much you're supposed to use. Does anyone here know? I want to use it as a substitute to the two eggs I eat every morning.

Egg beaters stick to whatever you cook them in like a bitch, no matter how much lube you use. Real eggs don't do that, and they cost less than half the price (16 "eggs" per 4.79 carton of egg beaters vs. 18 real eggs for 1.89 at Wal Mart). Just crack the egg and leave the yolk if you only want the protein.
