Eat 500 calories under your maintenance level. If you don't know what you're maintenance level is then figure it out. For the average person it's around 2000 calories. Since you seem like you've got your diet under control I won't go into any detail with that, just make sure you're getting enough protein so you don't lose whatever muscle you do have.
Also, to get rid of fat you must do CARDIO. But incorporate weightlifting into your routine or you won't have much shape when you do get to your ideal weight.
Sidenote: Depending on the elasticity of your skin you may need to have surgery anyways to get rid of the excess. I was at 280 3 years ago and I'm 170 now, and I have a good bit of extra skin on my lower abdomen area. I'm waiting until I get low enough body fat (I'm at 14 percent now)... if it still bothers me then I'll probably get a tummy tuck or something. Nothing worse than having to wear pants two sizes larger than needed. Falls off my fucking ass, and if I tighten it with a belt I've got overhang... sucks.. whatever.
