When doing push-ups and ab crunches, is it better to do many reps at a time or to do multiple sets with a smaller number? I want to increase muscle definition, not lose weight.

Why?
Doing 100 pull ups, IMO, is the same as benching an easy weight 100 times: no use.
Why until fail for bodyweight exercises?

Just make sure you have a proper form, go until you can't anymore and have a regular timing between the sets.
