I live in the south, that little northwest corner of SC that has a relatively low percentage of blacks, but there's still a battalion of obese people every place I go.
Lower income buys the cheapest (highest fat content) packages of meat, loads of starchy foods. They go to these "all you can eat" buffets, get a baked potato with butter, an ass load of sour cream, 3 tablespoons of bacon, & at least a 1/2 teaspoon of salt. That's in addition to the 2 pork chops, mashed potatoes & gravy, a piece of fried chicken, and either a mega large Pepsi or usually (very) sweet tea.
And then there's the "southern" style of cooking. Everything has to be seasoned with pork drippings, butter, & salt. All the veggies contain pork. Green beans seasoned with pork. Pinto beans with fatback. Corn with bacon & butter. Leafy greens all have chunks of fat.
If you point out to them that all that stuff is making them obese, you get the same answer....but it taste soooo good.
