Humans haven't even adapted to our high-sugar diets yet. Why do you think so many diabetics? They become insulin resistant because of the huge blood sugar spikes. You think we have evolved enough to efficiently process only plants? Sure we can live without meat, the human body is an amazing machine and will continue to subsist on practically anything you give it, but it will eventually degrade because of this treatment imo. If you really want to live forever though, supposedly almost starving yourself is the way to go.
