Why wouldn't you be able to do HIIT as well? I started doing HIIT at about 240 pounds, 6 reps at 90/30 seconds, and I was almost mostly fat, very little muscle (though I'd been biking regularly for weeks before hand, losing about 15 pounds). I did perfectly fine. No injuries, or adverse reactions, and I lost almost 8 pounds in the first week, with HIIT as my only cardio, and making few dietary changes (actually increased eating, added OATS and protein shakes). The weight is still coming off too. In fact, I'm about to do some HIIT with some friends before eating Thanksgiving dinner.
You really shouldn't have any problems with HIIT just because you're big. Sounds like most of your problems are dietary. And willpower.
