Personaly i stick to shrugs. They will build your traps quick, just use heavy weights. And do it until you litterally cannot move them anymore.
Shrug slow, constantly flexing your traps as you lift, focus on keeping them flexed until your shoulders touch your ears. Then back down slowly, keeping your traps constantly flexed.
If your not maxed in 3 reps, go heavier.
