The guy on stronglifts suggest you do all his exercises quickly, pushing the weight up as fast as you can.

But I don't see how that builds power up better, it is much easier for me to get the weight up if I do push it fast then if I go 3 seconds up, 3 seconds down.

What's best?

If you can push the weight up so fast, do more weight. Controlled decent, the fire the weight up as if you were pushing more weight than what is actually on the bar.

Possible, if you get sloppy because you are going fast. The solution is to practice your form with a bit less weight.

Struggling with *less weight* for longer. If spending more time lifting was what you needed, you'd be using two pound weights for a few hours. You're looking to maximize resistance, which means more weight, not more time holding a weight.

Actually I usually get to 3x5 with good form, good speed, then on the 4th and 5th I tend to stall a bit on the lift up.

So I'm thinking I should stick at that weight until I can do all 5 sets perfectly, only problem is that adding weight becomes addictive.

But if I fall in that pattern my form will probably get worse and worse as I progress since I didn't spend time fixing it while the weight was still manageable.

slow, focusing on the form and using the muscle you are working out. Many people lose good form when they add speed. You can "feel" the muscles better when actually focusing on the muscle and not just getting the weight up as fast as you can.

Concentric movement - fast as possible without compromising form for max power
Eccentric - controlled, forcing your muscle to do the work instead of gravity.

And microcycle the weight. The more i study physiology and adaptation responses the more i realise that cycles of everything are what the body responds to best.
