Hey, how often should i rest? I do Rippetoe's Starting strenght program.
I heard i should rest 1 week every 1 month but that seems a lot.

i do the rippetoes starting strength too. you're lifting 3 god damn days a week. you get 4 rest days a week, you dont need any more rest than that.

The point of an extended rest is to allow the organism to rest as a whole, and to allow accumulated fatigue to dissipate while keeping accumulated fitness. This process is known as "supercompensation", and is one of the 9 laws of adaptations.

To put it in simpler terms... lets suppose you train your legs Monday. You train your chest Wednesday. You train your abs and arms Friday. Each body part is training only once a week, right? Plenty of rest... RIGHT???

Your nervous system on the other hand is training 3 times a week. So is your endocrine system, your heart, your kidneys, etc. These eventually "burn out" over time. Your performance drops, and you plateau. You avoid this by taking a week (often times 2 weeks) off completely. For an extended "off time" you perform maintenance workouts, usually only 1 or 2 sets of 10 to 15 reps per muscle group, and almost always with the eccentric portion of the contractions removed to prevent further intracellular friction leading to cumulative microtrauma.

When you come back from this mini "vacation", thats the time you typically set personal records (or world records if you've mastered the skill).
