Hey /fit/, I've got a quick question. I usually do weightlifting three days a week: Mon, Weds, Fri. And on those days, my lifting routine consists of heavy lifting for ALL parts of the body. However, I've also considered dedicating each day to a specific target muscle group. So here's my question - which routine would be more effective?

depends on your body and your goal.
Are you Arnold and not satisfied with your calves? Then do isolation on those.
Are you average joe? Forget isolation work and get back to SQUATZ.

I'd be more in the line of "average Joe", though I train about six days a week for about 3-4 hours, depending on how much time I have. I'm just slightly curious about the difference between isolation and full-body workouts. Suppose I switch it up, and do a week of isolation exercises in between just to keep my muscles guessing?

What for? Isolation is really for advanced bbs who want to carve out special weaknesses on their body.
If you are normal, then hit the heavy weights till you are big.

Alright, gotcha'.
