You're undereating, and your body is reacting by consuming your muscle mass instead of fat.
No, you're not gaining "like 2 lbs" by eating one day of 2000 calories. One pound of fat = 3500 calories. Fix your calorie problems and eat 40-30-30 (look it up). Congratz on the 18%, that's much better than where you started. Now don't develop an eating disorder.
