I'm looking to get out of the "brown sugar + cinnamon" doldrums. I think oats has more blank slate potential than that, and I'm going to experiment. Has anyone had any success with savory recipes?I was thinking steel cut oats with butter, parmigiano, and grated nutmeg.

I might even go with chicken stock instead of water in the recipe above to really kick up the flavour.
