what is a good goal to go for fitness wise? I know that I will probably never reach olympic status, but what is a good goal to go for that is not determined by genetics?

Depends what you are looking for. Some want more muscle, some want low body fat, some want to run marathons etc..

athletic ability:
run sub 12 second 100m
score 15 on the shuttle run
dunk a basketball
do a backflip
swim the ocean for 1km
swim a pool for 2km
perform 20 pullups, no kipping
perform at least one one handed pullup
squat 2x bw, deadlift 2x bw, bench 1.5x bw
be able to run at a good pace for upwards of 15km
be at a solid weight for your body, generally 5-10kg above normal- have that be muscle
perform handstand pushups
know how to throw a punch and tuck your chin
play one sport competitively at an amateur level with friends
have good flexibility

there is a limit your body reaches even with good training, nutrition, supplements etc, but nobody outside of professional sport barely ever gets there.

Being shot makes tumbling easier. You will have a harder time doing spins across a vertical plane (Forward flips) because you require more energy to perform them and will have a harder time landing them as the extra energy may cause you to fault due to the extra momentum.

To perform at the same level as them, yes. However, you could take up tricking or something similar; people like Anis from Team Loopkicks are pretty spectacular, and tall too.

The power moves though like the planche and front lever, etc., are still available to you.
