basic formula is 2.0 g of protein for every 1 kg of body weight if you're trying to gain muscle mass. the "standard" PCF (protein, carb, fat) ratio is something like 15/30/55, you want something closer to 20-25% of your calorie intake to be protein, with lower fat. if your caloric intake from fats is already lower than 20% however, which it sounds like it might be, raise that to at least 20% or so, much lower is quite unhealthy in general.
make certain you have complete ammino acid chains, I'm sure wikipedia can answer your questions there.
