/fit/, should I just not eat dinner? It's 9:00 PM... The last time I ate was an apple at 3:30 or so. I guess I'm not that hungry.

Having a slow metabolism is beneficial. Metabolism is not linked to losing weight, rather, it determines how much food you need to run your body efficiently. Slower metabolism = eat less and feel more full, thus making dieting easier.

Also, if you're worried about metabolism, simply drinking water keeps your metabolism working. Catabolism is always working as long as there is something in your stomach that is required to be broken down for consumption by your body...this includes water.

Now, do you honestly need people on the Internet to tell you if you're hungry or not?

The last time I eat is at 9-10pm in the form of 40g of slow release protein, 5g of fat, and 7-10g of carbs.

I usually fall asleep at 12am-1am.

Were it that it worked that way. Sadly, this is only true up until a point: when you don't consume enough to power your body for the day, you start storing everything you eat as fat. So practically speaking, the best way to lose weight is to make sure your body knows that it is in times of plenty so it won't be afraid to burn its fat stores.
