I was in your same position a few months ago. Crash dieted for about two years not even knowing it--misinformation made me think caloric deficits were bomb and good for weightloss. But nope.
Go find Venuto's Burn the Fat Feed the Muscle, and read it and follow it. The thing about transitioning to a real diet and exercise regimen is that it will be a slow and psychologically paranoid progression. You will think the results aren't there because they're sneaking up on you so slow--but man, they are definitely there. Eating a proper amount just slightly below caloric needs is going to make you think you're getting bloated, but your bodyfat is the thin layer on the outside, not the inward expansion that food will do to you.
Basically, 5-6 meals a day spaced out evenly, protein with each, keep fat and carbs separate--fats toward night, carbs loaded in the morning. Healthy sources only. Eat oatmeal for breakfast, whey after exercise, and cottage cheese is always an awesome snack. Stay away from simple sugars.
