Yeah, to expand on what has been said.
Oils high in sat, low in poly and monounsaturated fats are best for cooking. - I use macadamia nut oil. Also good is coconut.
Otherwise, you want more balanced oils, particularly high in monounsaturates. Olive, Canola, Flaxseed
The old news was that you should use olive oil and other oils low in saturates for everything, but we now know this is bad because the other fats are unstable at high temperatures and oxidise. This has been linked to an increase in LDLs.
The thing about fatty acids is that they need to be in balance. Monounsaturates vs saturates should be 2:1 omega-6 vs omega-3 should be between 1:1 and 4:1, whereas in the modern diet its more like 16:1.
