you need all your power for the next set again, so rest till your muscles are at full strength and your heart is not racing anymore.

You want a weight you can lift for all 5 reps in every set WITHOUT failing on the final rep and the next four sets. So, you want to consistently lift the weight with high intensity for all five sets with 3-5 minutes of rest in between without failing on any set. Say what you what, but that's how it's supposed to be done.
