It depends. If you're eating before bed, make sure whatever you consume is low in, if not free of carbohydrates. If you're trying to gain weight, I would recommend some sort of protein rich food (preferably a shake) before bed, since you're basically going to be fasting for ~8 hours. As far as the fat goes, I think the 3 tablespoons of peanut butter in the middle of the day is kind of a weird place to put that much fat; that's like 18 grams. I would eat like half of that before your work out and half after, or put it in your shake.
What the fuck are you doing for 2 hours at the gym anyway? If you're able to work out for two hours straight even with warm up and cool down time, you're probably not working hard enough.
