I'm usually in bed by now but i think i overtrained today and can't sleep (sore shins and lack of sleep usually tell me this)
I'm hungry, but i'v had my 1000-1500 calories today. should i make something to stop my body going "well if he's not gonna feed me, then i will just start paying more attention to the fat he does"
Or should i not eat and let my stomache dwell on its empty untill it decides to 'eat' my fat?
I'v heard VERY mixed things about this.

Your CNS needs approximately 1100 just to function. That doesn't include your body. If you want to lose weight, just eat less than what you usually eat and burn more calories from either exercise or work. Just make sure to toss it up and keep changing your methods cause the body memorizes routine and workouts become less effective.

Oh, and try to spread the food you eat into five meals, rather than the basic three. That way, it keeps your metabolism going. Make sure you drink lots of water cause that helps to not only keep you full, but keep your metabolism in check. You'll also feel better.

I was just wondering...does it make a difference if you work out at different times during the day?

For example...for three days, work out first thing in a morning, then for the next three, work out at night?

Or is it better just to vary your work out? (ie - different cardio machines, different weights, different orders, etc)

You should workout during the day when your energy peaks, usually this is in the afternoon. This helps you get the most out of your workout. Variance by time of day will not have any other "shock" effect on your body that I'm aware of.

Try to vomit what you ate previously, and eat that.

Your body doesn't eat fat when it is hungry...it eats fat when it is full. Sounds counter-intuitive, but that is the case. You see, fat is harder to metabolise than say, muscle, so your body goes for the muscle when it is hungry because it requires less energy to do so.

tl;dr You need to eat more if you want to lose fat.
