Should you do chest exercises every day, or should you do them one day, rest the next day, then rinse and repeat?

Depends on the rep scheme, intent of training and... you know what, fuck it. Do chest exercises everyday to failure for the rest of your lives. Big Pecs ftw, i dunz caer anymoar.

Also, after doing lower body + upper body workouts (with dumbbells, mostly), would it be OK to swim the next day, or better to just totally lay off it?

if you're a nigger, bodybuilder, or faggot (aiming for size), then take a day off before repeating a muscle group

if you're a worthwhile human being (including but not limited to: olympic lifter, power lifter, athlete) then either do high intensity endurance or extreme low rep work (1-4)

If you want definition, high reps, medium load, and short rest intervals. As for alternating days of exercise it's up to you, but the minimum should be 1 out of every 4 days be a rest day (or two days per "microcycle")
