You don't need carbs to survive, you DO need fat to survive. your body can easily convert fat into glycogen to fuel your brain and whatever else needs it, but your body is very, very inefficient in turning any other sources of fat into fat. A person can live on less than 30g of carbs a day for the rest of his or her life. You cannot live very long if you were to limit your fat intake to 30g a day and if you did it wouldn't be healthy.
once you limit high fat foods, where are you going to get your fat intake? most whole foods are either carbs+little protein (vegetables), carbs (fruit), fat+little protein (nuts and seeds), fat+high protein (meat), or fat (oils)
