i've been lifting off and on for 3 years. I'm currently 230 with a 36" waist. School is starting next week and I have class MWF so I'm doing a 3x a week full body plan, with hiit on off days. I wondered if I should have squats and deads every lifting day or alternate and have an easier quad/ham dominant lift on the off day for the corresponding lift. Or I can try squating and deading everyday, which I think might inhibit my ability to use max. effort.

Alternate.
Doing squats and deadlift on the same day, three times a week is going to make you plateau pretty quickly.
Go for the rest. You'll feel better and put up better numbers.
