olive oil is one of the more volatile food oils, so it'll burn off/evaporate waaay too quickly when you're frying stuff. I usually go with canola when I make stir fry's and shit. It seems like a better choice than butter.

Notice how the saturated fats (Coconut, lard, butter) are all on the low end of the spectrum, whereas neutral unsaturated fats (avocado, canola, tea seed, rice bran) have high smoke points.

canola oil is the healthiest hands down. however, most of the canola sold in the US is genetically modified, so be sure to get organic. I always use olive oil for salads thought

Yeah, to expand on what has been said.

Oils high in sat, low in poly and monounsaturated fats are best for cooking. - I use macadamia nut oil. Also good is coconut.

Otherwise, you want more balanced oils, particularly high in monounsaturates. Olive, Canola, Flaxseed

The old news was that you should use olive oil and other oils low in saturates for everything, but we now know this is bad because the other fats are unstable at high temperatures and oxidise. This has been linked to an increase in LDLs.

The thing about fatty acids is that they need to be in balance. Monounsaturates vs saturates should be 2:1
omega-6 vs omega-3 should be between 1:1 and 4:1, whereas in the modern diet its more like 16:1.

Canola, Olive and Vegetable are the best oils IMO.

Like with anything, moderation is key. If you're going to be deep frying something, it doesn't really fucking matter how "healthy" the oil is, you still saturated the food with tons of fat and calories.

One thing I hate is when I explain a "healthy" diet to people and I recommend pan-fried chicken breasts, they instantly think I'm talking deep fried chicken fingers or some shit. Hell no. Use three skinless tenderloins and like half a TEASPOON of olive oil, that's plenty to lubricate the pan and is only like 3-4 grams of extra fat instead of the 20+ grams of fat you get with one tablespoon.

Note that: 20 or so grams of fat in one tablespoon of most oils. Now imagine how much is being absorbed when you deep fry stuff in a quart of oil. Yeah. Frying does imply that you're using oil, but the amount of oil can make frying either very healthy or very terrible.

I never fats are bad. I said deep frying is bad because it overloads food with fat and calories. OVER. LOADS. AS IN "TOO MUCH". It does not fucking matter if they're all monounsaturated fats, they still have 9 calories per gram and add up quickly. Dipfuck.

And, no, I do not eat high carb/low fat. I just eat. I eat in moderation. I keep it simple. I'm never going to be a shithead like you who constantly chases the latest diet advocated in Fatass Weekly.

A common meal I have starts with enough olive oil in a pan to thinly coat the bottom, heated usually medium or med-high, I throw diced pieces of chicken breast in, cook for a few minutes, throw some spinach and a bell pepper in, spice with what have you, and serve with potatoes or quinoa. Am I doing the oil thing wrong? If so, what would be advisable?

I should mention olive oil isnt your best choice for pan frying, though. Certain fats in the oil oxidize when explosed to high temperatures and according to recent research- raise your cholesteral levels.

Grapeseed oil and canola handle heat very nicely and are perfect for frying. Olive oil on the other hand is good for drizzling over salads, and things like that.
