As meal replacement shakes go, slimfast sucks air. Almost any supplement vendor will make a better meal rep shake. Look into them at bodybuilding.com or any other site, or you local supplement store.
Also, don't replace more than one meal a day with shakes. Solid food is important.
To meet your weight loss goal, you should eat less, and work out more.
You have to very seriously WORK at it to hurt yourself by drinking too much water. I can go through two gallons a day when cutting with no ill effects. You don't need to start worrying about hepatotoxicity or encephalitis unless you are 1) taking an anti-diuretic or 2) drinking six-ish gallons a day.
Gatorade is sugar water, avoid it like the plague.
