Back after questioning my mother.
She says this is how she prepares the rice:
She takes the rice, and puts water with them. After they get soft and shit, they pours out all the water to get rid of all the unnecessary starches and whatnot. She said that she estimates a cup of cooked rice would equal to 100 calories, and also she puts about a spoonful of oil to the rice. Tonight, she's making zereshk polo, pic is related as to what it looks like. little strips of boiled chicken is on it. the berries are berberis, which she adds a tiny bit of sugar to when she is preparing it.
note, I don't eat as much as the pic, I eat less.
About lunch, I've decided to go to Whole Foods tomorrow to find some sort of peanut butter my mom was telling me about. apparently, only 5 grams of fat per two tablespoons, and she said she believes the calories are low too.
as for breakfast, I'll take the Special K advice.
for a snack in between lunch and dinner, I was thinking of some yogurt. not sure what yet, though.
