Sucrose is a dextrose and a fructose molecule bound togheter. So it contains half fructose. And fructose is the quickest way OUT of ketosis. That's because fructose is processed by the liver (into dextrose, actually) and then preferentially used to refill liver glycogen (which is what kicks you out of keto). It's also a SLOW process so it beats the purpose of PWO carbs anyway.
What you want in your PWO shake is something that will raise insulin quickly and for a short time, so your protein is quickly transported into your muscles. The single best thing to do that is pure DEXTROSE, which goes directly into the bloodstream without processing.
[Maltodextrin is a bunch of dextrose molecules bound togheter in "chunks" of various sizes, mixed with a little proportion of pure dextrose. (If the proportion is too high, they can't call it maltodextrin and have to use the name "glucose syrup"). So maltodextrin CAN do the job if you don't have pure dextrose handy, but it's just a little slower (like... 10% slower) to enter bloodstream. That's because the "chunks" first have to be broken down into dextrose molecules, which begins with salivation and ends in the stomach.]
