I know that like too much of anything, too much salt is bad for you. My question is: Why? I want a scientific answer on this one.

Also, are there any guidelines on how much salt one person should consume per day?

I thought those were used by people who really need sodium (and potassium) because of the amount they were expelling. IE: athletes

Kind of like what gatorade is supposed to do, except without all the shit they mix into it. Or even Accelerade or something (it does have other minerals and vitamins though)

Meh, I took a bio major class on desert ecology. This shit is simple.

Going into the biological reasoning for why we typically drink when we eat, that's where it gets weird. Lets just say the average human dehydrates them self between meals, and there are evolutionary reasons to this.
