You can saute them in olive oil. Season with parsley, red (cayenne) pepper, black pepper, garlic, onion powder, etc., whatever taste you like! Use salt sparingly though.
What I do, I take veggies like bell peppers (green, red, orange, yellow, they all taste different), onions, broccoli, asparagus, cabbage, squash, etc., and saute them. After they get about half done, I add some veggie that tastes great (corn, peas, green beens, rice) and saute that together with the other veggies you may not like. After that, whatever you do with them is up to you. You can add some meat, add it to a soup or stew, or just enjoy it as a side dish.
