I think you're doing fine, if you feel hungry there are plenty of healthy things you can munch on- slices of carrot, nuts, fruits- i actually think these things taste good, you will to after you just eat them a lot.
In terms of cardio, look at interval training and HIIT- as it will burn fat faster (some studies show 900% tnation goes wer) than your regular run of the mill boring running/jogging on the treadmill.
Interval training can be fun, especially when you can see your progression. The concept is basically this- do something that raises your heart-rate for say 30seconds, then cooldown for 30seconds by lowering your heart rate, and doing this for an extended period of time.
Pick an exercise you enjoy doing or are good at, let's say you like swimming, its a great choice for you personally because it wont put so much stress on your joints (260lbs is putting a lot of stress on your joints already)- you could swim freestyle for 30seconds, then switch it up to a slower frog style for 30seconds etc. After 20mins your body will be loving you.
