Also, I've found that time and time again, the more heug the breed, the more relaxed they tend to be. Not so much with Great Danes, but Pyrenees, St. Bernard, Newfoundland, Wolfhounds, and even gigantic Mastiffs. They're fairly calm breeds, even as puppies. And as puppies, well, they're much more manageable.
