er...this is a pretty simple case of evolution. The bugs that look like leaves are hard for predators to see, so they don't get eaten.

BTW, some species of katydid look nothing like leaves: pic related.

In reality, though, it's random and takes a long time. Each generation is randomly generated from the previous generation's distribution, and the ones that look least like a leaf get picked off.
