Why do cats like cheese?
Is it because they like mice, and mice eat cheese, so it reminds them of mice?

but they can tell if you don't like the gifts they leave; our cat would leave dead field mice at our door and after taking note of the fact that Mom would freak out and refuse him entry to the house while carrying a dead thing in his mouth, he started bringing us live mice instead. Well I think perhaps in your cat's mind, leaving the head is pretty much undenyable proof of getting the kill and still leaves him plenty to snack on. Then again, maybe he wanted you to preserve the skulls, maybe bleach them nice and white and make a little mouse skull temple around his cat bed

I had one cat when I was a kid who'd caught a mouse once and brought it into my bedroom, meowed her head off till I told her she was awesome for bringing me dead things, and then proceeded to start gnawing its legs off.

Our cats always eat the head, even if they leave the other parts intact. I'm guessing it's extra delicious due to the brain (lots of good fats in there, probably tastes great for a cat. In fact it's a delicacy among some people too) So a cat who always brings the heads must really really love you since it's leaving you the best part!
