I suspect the OP fish is dark because it is one of those fish that lures prey with a light dangling on the end of the thing protruding from its head. To have the light illuminate your white body, complete with waiting fangs, would kinda give the game away...

I'm pretty sure these things die before they even get out of the water because of the drop in pressure. If they were caught and the water repressurised while they were still in their natural environment, maybe, but it'd be difficult to feed them.
