Here's a question for you, /an/... Why would a fish evolve in such a way that allows them to fly out of the water like that? Is it to escape predators or what?

There is no "why" in evolution. The proper question would be "how".

Also, Flying Fish do use this ability to glide to escape predators. Many schooling fish dart around near the surface and jump out of the water in response to being chased by predators.
