The discrepancies between cat breeds is far more subtle then they are between dog breeds. Certain breeds have certain tendencies, but the differences between a Siamese and a Persian seem somewhat insignificant when compared to the differences between a Yorkshire Terrier and Great Pyrenees. Obviously, Siamese tend to be more vocal and active then your average Persian, but behaviorally and nutritionally they are more alike then different.
If you just want a moggie, though, you can pretty much narrow it down to a certain build or coat color, then find a cat who's personality suits you. In cats, individual personality usually trumps breed or appearance.
