I've got a black ghost knifefish, striped peacock eel, four glass catfish, two corydoras, two otocinclus, a rubber lipped peco, and a spotted climbing perch in a 55 gallon aquarium.
What else should I add?

5+ Zebra danios, maybe? They're a peaceful schooling fish and they're kinda pretty.

I'm looking for something prettier, and maybe a little less common.

Well considering both the ghost knife and the eel will vastly outgrow a 55 gallon...I say invest in a bigger tank for them and just get some gouramis for your current.

A betta.

Or an arrowana.

I think a 4 foot long tank is big enough for a peacock eel which will get 14 inches at maximum. The black ghost may need to move to a bigger aquarium. They're supposed to get to be around two feet long, though I've never seen one that was even a foot long.

Nothing. Wait for them to grow, and soon you'll be wondering which ones to take out.

I'll be completely, totally, utterly honest because I had a spotted climbing perch:

There's nothing you can add that would be of an appropriate size that your fish will not eat. I had a smaller tank, with just the spotted climbing perch and thirteen white cloud mountain minnows. One by one my white clouds disappeared, and my spotted climbing perch got fatter and fatter. I tried some buenos aries tetras, which were two or three times the size of the white clouds, and they all disappeared, too.

tl;dr

Spotted Climbing Perch will eat anything they can fit into their very, very large mouths.

I'm not going to wait for it to get too crowded before moving them into a bigger tank. I still want to have other things in there in the mean time.

So I'll need to go bigger than tetras then

The black ghost needs more room if you expect all those fish to survive. Never heard of one placed with a spotted climbing perch but I bet it'd be a good fight.
Separate them or else all you'll be left with is maybe a rubber lipped pleco

Make sure you have clove oil and a dremel handy to file down their beaks.

Yes I realized before I got it that I would eventually have to put the black ghost into a much larger aquarium. He's only four or five inches long, so he's fine for now where he is.
From the way you talk about the fish I assume you've dealt with neither species. Maybe you should just stick to giving advice about goldfish.
