He may be going through brumation, I know my 6 year old bearded dragon is right now. Bearded dragons are often more sleepy and eat less during winter, it's normal, research "brumation" and see if it sounds like what your dragon is doing. If not, it could be parasites. And don't panic if your dragon doesn't really eat for a day, it's not that uncommon.
Make sure you're only feeding tiny crickets that are smaller than the distance between his eyes. Try to hand-feed him crickets and the veggies so that he can't ignore them. And chop your vegetables up in smaller pieces, my bearded dragon never eats huge pieces of lettuce.
