By not using a choke-chain or pinch-collar method, that's how.
Gentle Leader or Halti headcollars work wonders if you fit them properly. Also, I've found that time and time again, the more heug the breed, the more relaxed they tend to be. Not so much with Great Danes, but Pyrenees, St. Bernard, Newfoundland, Wolfhounds, and even gigantic Mastiffs. They're fairly calm breeds, even as puppies. And as puppies, well, they're much more manageable.

OP is a neapolitan mastiff... img = photoshopped.

A lot of these dogs appear big because the people are a) small or b) photo uses human/dog positions to misguide actual size of human/animal.

I posted that Great Pyrenees pic, but it's just an old one and not my dog.... Could you post some pics of your own dogs? I must admit, a little envy emerges when seeing owners with their large beautiful breeds. Not that I love my own dogs any less!

I work at a pet shop and I'm used to seeing big dogs, and having stood next and patted an Old English Mastif I think you down play their size a bit. The owners of said dog said that their neighbor had a pony. The Mastif was indeed larger than that pony.

Though I agree pixels, many in my time etc...
