I've always wondered what Cambrian seafood would taste like. Anomalocaris was probably close to lobster in taste, but firmer in texture as it was a chasing predator. Opabinia might taste like a curious mix of crab and lamprey, as it had some features we see in modern vertebrates and a hard partial exoskeleton.
They're probably not kosher, btw.
