Honestly, as little as possible. Once a week is pushing it, once every two weeks is usually fine. Any more often than that and you'll likely cause dry skin (not to mention that overbathing actually destroys the beneficial bacterial balance in the skin, causing an even nastier smell than doggy smell that, obviously, can't be washed out). Be sure to use a gentle, tearless formula around the face.
If your dog gets dirty in-between baths, you can use baby or doggy wipes (yes, they exist) to clean up muddy paws and such. A quick rinse under water will also work for paws. See if your local pet shops carry any oil-based colognes, as a few drops on the back of the neck last for a week or more. Lambert Kay makes some that are very good.
Ask around a few of your local groom shops for advice or products that they recommend.
