Why do animals just randomly freak out and run out of the room on occasion?

I used to have two cats and they too would sometimes just run around from room to room for no apparent reason. We always joked that they were chasing ghosts.

If it's a rabbit that's doing it, it's because it's spastically happy. Cats do it because they're possessed, and dogs do it because they're bored or hyper.

They might be hearing some ultrasonic waves, either some incredibly painful loud noise or some interesting noises from elsewhere.

They make those dog & cat repellers with sound waves, so it seems to have an effect.

I do know cats get random bursts of pent-up energy that they release by running around. Normally in nature, it's saved to aid them in hunting and killing, but there's not much a domesticated cat has to chase down and kill.
