Although it may be possible that a cat is really bipolar (as in manic depressive), I assume that your cat is just like every other cat: egocentric. Most cats like being patted and cuddled when they are in the mood for it, but react funny or even aggressive when you try to touch them/ lift them up the rest of time. That's perfectly normal. Watch the body language. When the fur starts twitching, the tail is shaking, the ears are pulled back, the eyes become larger, she tenses up or even growls -- stay away. Only cuddle her when she wants to be cuddled (= comes to you). As soon as she changes her behavior, shove her away and ignore her.
Eventually she'll learn that you won't annoy her when she needs her i-want-to-be-alone-now-time, and come to you to get her cup of cuddle.
