Ok, I'd like some advice. I've been wanting to keep a somewhat large plant in an enclosure similar to this for my tortoises. I'm hoping I can find something that will be active all year round, will provide something to hide under in addition to their log, and will fit with the whole desert theme. I was thinking about a small bush, but I have no clue where to begin. Obviously its leaves need to be edible by tortoises.

Picture is basically my setup, without hay, just a single, boring, and small log for line of sight breaks, and a hollow hiding log at the other end.

You can't use plants in a cage that size. A tortoise can strip bark off a tree with it's claws. How do you think a bush will fare? If you want more interesting things to look at then use fake plants and a nice water bowl. Although with that setup you aren't going to get much of a view no matter what you do. You should use a hot knife to cut out a big rectangle on the side and put in some screen.
