With our cows and horses I know damned well it isn't protein deficiency that's caused them to eat meat. In fact, our vet bitched at us for giving them too much for their work level. For calcium they get mineral blocks and supplements.
As for a horse attacking its rider. Go to Mountaineer Racetrack in West Virginia. They'll happily take a chunk out of you, rip you to shreds, or trample you to death. I know a woman that quite literally had her breast ripped off by one as she was walking past the stall. The race horses are nutcases there. At least five deaths in the last year, mos where the horses intentionally killed their handlers/riders.
