I have three ferrets. How much they stink depends on two main factors: diet and cage set up. If you feed them a high quality, by-product free food their poo will smell much less.
Also avoid flaky woodchips or Carefresh bedding, as oil-saturated bits gets scattered all over the place and are difficult to pick up. The best bedding is a simple pile of old clothes. Keep a few old bundles of tshirts or something (polar flece is great) on hand and change out the cage every few days.
Oh yeah, and use a large, square bottomed litter box with a 1/4 inch thick section of newspaper in it. It's cheaper and easier to change than traditional litters, so it's easy to toss out once or twice a day.
A simplistic cage helps, too. Less flooring/bars/wires translates to fewer surfaces for dirt, oils, and food particles to collect on. It gets washed away when you wash the cloth bedding.
