I've had three hedgehogs, one I got when it was about a year old, one I got when it was about 7 months or so, and one when it was about 4-5 months old. None of them had been properly handled and socialized, so at first they were all very wary and rolled into a ball all the time. They all ended up calming down once they got used to me, but the oldest two still never trusted me enough to touch their face too much or make any major sudden movements. They youngest though, since I had gotten it when it was just a baby, has complete trust in me, and is now a little over a year old. I can touch her face, her stomach, anywhere and she won't even raise a quill. The older ones take a little more time, but it isn't a hopeless case.
Try putting a recently worn tshirt in the cage with the hedgie. It will probably sleep in it and in turn get used to your sent. You'll find that after a week of doing this the hedgie will probably be a lot more trusting of you.
