My rabbit insists on eating her cardboard toys, her litter (I use Carefresh), and any other pieces of paper or cardboard she can get her teeth on. I don't think it's because she's hungry ... she's always got a supply of hay, and she gets pellets, fresh vegetables, and a seed mix every day. She doesn't like chewing on wooden toys, either.

Her eating cardboard and paper products won't hurt her, will it? If so, is there any way I can get her to stop?

Her playpen is full of chewable toys, but she won't touch anything that isn't made of cardboard. She snubs plastic, wood, seagrass, wicker, etc. The problem is that she actually swallows the cardboard she chews up.

Rabbit's teeth are constantly growing. Cardboard doesn't hurt her. Good thing she is not chewing your carpet/furniture. More cardboard to her.
But, PLEASE, DON'T GIVE HER SEEDS. They're very bad for bunnies, doesn't matter if they sell them for bunnies they're BAD for rabbits. Give groats as a treat, if you will, but please, no seeds.
