Freezing is definitely the way to go about killing crustaceans, this is considered the humane way to do it when you've got live lobsters/crays/crabs for cooking (as opposed to the "fuck it, just dump it in the boiling water or shove a knife through its thorax" method). I've been told that their functions simply slow to the point of stopping and then you put them in the boiling water to finish them off while they're comatose.
