r-selection
In unstable or unpredictable environments r-selection predominates, as the ability to reproduce quickly is crucial, and there is little advantage in adaptations that permit successful competition with other organisms, because the environment is likely to change again. Traits that are thought to be characteristic of r-selection include: high fecundity, small body size, early maturity onset, short generation time, and the ability to disperse offspring widely. Organisms whose life history is subject to r-selection are often referred to as r-strategists or r-selected. Organisms with r-selected traits range from bacteria and diatoms, through insects and weeds, to various semelparous cephalopods and mammals, especially small rodents.

K-selection
In stable or predictable environments K-selection predominates, as the ability to compete successfully for limited resources is crucial, and populations of K-selected organisms typically are very constant and close to the maximum that the environment can bear. Traits that are thought to be characteristic of K-selection include: large body size, long life expectancy, and the production of fewer offspring that require extensive parental care until they mature. Organisms whose life history is subject to K-selection are often referred to as K-strategists or K-selected. Organisms with K-selected traits include large organisms such as elephants, humans and whales, but smaller organisms also use this "strategy" successfully, such as Arctic Terns.

The majority of organisms fall between these two ecological extremes and may display traits considered characteristic of both ends of the r/K spectrum.

Biologically humans fit that category EXACTLY. What you are ignoring is that humans have eliminated just about all the natural causes that kill or otherwise incapacitate most offspring before maturity and mating, i.e. diseases, parasites, predators, famine. If humans were r-strategists, the Chinese would be killing easily more than ten children per family EACH YEAR.

Technically, humans in developing countries lean more as a r-strategists because they're poorer so they have to pop out a shitload of babies resulting in higher performance of labor. Not to mention, they don't know a whole lot about sex education such as condoms, birth control, etc.

Also, humans will breed like rabbits in times of high stress. Many baby booms can be traced back to a particular traumatic event nine months before. People will say that they made love to comfort each other or that they just wanted to indulge in the physical action of sex to forget their worries...but in actual fact it's because there's a buried instinct in the back of the human brain that gets switched on during times of stress. Drama happens, that switch gets flicked and next thing you know your mind is screaming, MAKE BABIES! BABIES! BAAAAAAAAAAAAAAAAAAAABIEEEEEEEEESSSSSSSS NAO!!

No. That is not r-strategy. R-strategy when you churn out tens of babies every time you can get pregnant, and then you dump them as soon as possible, preferrably within a few month of giving birth to them, and they in turn start reproducing within a year of birth. Humans are physically incapable of becoming r-strategists because of our giant brains that lead to long fetal development and slow maturation rates. All the reproductive strategies humans have at their disposal are well within the limits of K-selection.

If you want an example of a large animal that is close to an r-strategist, look at swine. Wild pigs have litters of 4-6 each year, and the piglets are ready to reproduce at the age of 1 year. Humans could never hope to get even close to that. An even better example is a crocodile, that produces up to 80 eggs per year. The mother will guard the nest for the few months that are necessary for the young to reach hatching age, but will leave them to their own devices soon afterwards. That is how a real r-strategist reproduces: lots of babies often, little or no care. Even still, a crocodile has two clear K-strategist traits they share with humans: long lifespan, large body size and slow maturation.
