A Crayfish is perfect for that, and they really aren't hard to care for at all.
I've had them before, the problem is you can't really keep them with other fish. For one, if you keep them with smaller fish, the Crayfish will eventually grab and eat them. If you keep them with anything bigger, or predatory, they'll tear the Crayfish apart if it molts.
Anyway, most Crayfish don't get past 6" at they're very max so a tank like that would be fine for a single Cray, just don't put more than one or they'll fight.
